I have such a sweet tooth and looking back over the recipes that were linked up to #CookBlogShare last week I wanted to make them all. So it gave me a wonderful theme for this week’s round up – Spring Desserts. It’s safe to say I will be making them all.

This is one of my favourite recipes. A layer of frozen fruit (or fresh fruit) lines the bottom of a cake tin or skillet followed by a layer of light and fluffy sponge cake. From the top it looks like a simple sponge but when you dish the summer fruit sponge up the hot fruit is revealed.

If you love chocolate and cookies you will absolutely love my Easter Chocolate Mini Egg Cookies. Chocolate cookies studded with Cadbury mini eggs are a tasty treat and an easy Easter cookie recipe. Mini Egg Easter cookies are great fun for the family and make a great edible Easter gift too. A great Spring Desserts option.
