A Simply Delicious Vanilla Bundt Cake
Last week I used my brand new Nordic Ware Yule Log tin and made a fabulous vanilla cake. This recipe works well for decorative tins and I usually use it for Bundt cakes.
This is a simple yet very tasty vanilla cake. I love vanilla and this was a refreshing cake after so much food over Christmas.
– 220g unsalted butter at room temperature
– 225g golden caster sugar
– 225g caster sugar
– 4 medium eggs
– 350g plain flour
– half a teaspoon of bicarb
– small pinch of salt
– 350g vanilla yoghurt
– 1 teaspoon of vanilla extract
– 1 vanilla pod seeds scraped out (I love vanilla and this really boosted the flavour)
-Preheat the oven to 160 c.
-Grease the cake tin with melted butter and dust with flour – this will help you see if you haven’t greased any spots.
-Cream the butter (at room temperature) with sugars until light and fluffy.
-Add the eggs one at a time, beating well in between each egg.
-Add the yoghurt and mix well.
-Measure and sieve out the flour, bicarbonate of soda and salt in two goes into the mixture.
-Pour the mix into a greased and floured tin.
-Bake in the oven for about 1 hour 15 minutes or until a skewer comes out clean. I turn it around after 45 minutes to make sure it’s evenly cooked.
-The cake will pull away from the edge of the tin when it is ready.
-Leave the cake to cool fully before removing from the tin.
