I posted this up about 6 months/year ago and never managed to get some photos of the result before it was eaten but finally there are photos and an updated recipe. If you like sugar you will like this!

Maltesers Summer Fridge Tray Bake

Servings 20 portions

  • 100 g of unsalted butter
  • 3 tablespoons of golden syrup
  • 200 g milk chocolate
  • 300 g of digestive biscuits
  • 175 g of maltesers
  • 300 g of white chocolate


  1. Place the butter, golden syrup and milk chocolate in a saucepan and melt together on a gentle heat, keep stirring. Take it off the heat when it's all melted together.
  2. Crush the digestives to crumbs and add to the melted chocolate mixture. (I use a rolling pin and hit the biscuits to make the crumbs.)
  3. Once throughly mixed add the maltesers.
  4. Line a small baking tray with greaseproof paper.
  5. Put the mixture into the pan and press in firmly to compact the mix.
  6. Melt the white chocolate in a bowl over hot water.When it has melted pour the chocolate over the maltesers mix. Put in the fridge for until set – after 1 hour cut into slices and return to the fridge. It's easier to cut when it's still setting.

Add the white chocolate layer

Slice it up while it’s been in the fridge for a while and starting to set
