Cranberry and White Chocolate Christmas Cookies

This is a mix of about 3 recipes I have mixed together over the years to make this yummy recipe for my favourite Christmas cookies. Warning these cookies won’t last long! They are just too yummy.

This is also a really quick recipe. The whole making and baking to eating took less than 40 mins.

Cranberry and White Chocolate Cookies

  • 60 g of unsalted butter
  • 40 g dark brown sugar
  • 50 g caster sugar
  • 1 medium egg
  • 80 g plain flour
  • ¼ tsp of baking powder
  • tiny pinch of salt
  • 60 g rolled oats
  • 100 g of white chocolate chips
  • 75 g dried cranberries
  • ½ tsp of ground cinnamon
  • ¼ tsp of nutmeg
  • ¼ tsp and ginger
  • ¼ tsp of mixed spice
  • Cream together the butter and sugars until light and fluffy. Add the egg.


  1. Sieve in the flour, baking powder and salt.
  2. Mix in everything else. The consistency should be sticky. Add a little splash milk if it is too dry.
  3. Put heaped half teaspoons on to greaseproof paper lined baking tray and bake for 10-15 minutes at 160 degrees.
  4. Make sure the cookie heaps are far away from each other as the cookies will spread.

This is how far apart I put the cookie blobs on the baking tray. I managed 6 a tray, 18 cookies in all.

Fresh out of the oven – warm chocolate chips and cranberries. YUM.
