Coriander, Chilli, Garlic and Coconut Oil Marinated Lamb Kebabs is a really easy recipe and takes only 5 minutes to make, a few minutes to cook and only seconds to eat. You can leave it to marinate for a few minutes or over night. It’s a very versatile dinner and also works really well as a marinade for salmon and chicken.

 

Dividing up the lamb with peppers added a great crunch to compliment the tender meat in the final dish.

Making the marinade

To make the marinade I used Jeeva’s organic coconut oil infused with chilli and garlic. It’s a beautiful product to use for a marinade as it’s so light. The infusion of the coconut oil with chilli and garlic adds an extra quality which works very well. I was surprised how well the chilli and garlic flavour tasted with the pure coconut taste.

The marinade is very easy to make in a food processor. Simply add a large handful of coriander to the processor along with 2 cloves of garlic (I used to two small ones), 1 chilli (add more if you want to have a real kick) and 2 heaped tablespoons of Jeeva’s coconut oil infused with chilli and garlic. Blitz until you get a smooth paste. If it’s still a bit thick add some more coconut oil or olive oil and a little salt and pepper. Add the paste to the lamb and mix it in. You can either leave it there to marinate or load up the kebabs ready to cook.

Coriander, Chilli, Garlic and Coconut Oil Marinated Lamb Kebabs

Servings 8 kebabs

Ingredients

  • 100 grams fresh coriander
  • 2 cloves garlic
  • 1 chilli (add more to taste)
  • 2 tbsp Jeeva coconut oil infused with chilli and garlic
  • 2 tbsp olive oil
  • 300 grams diced lamb (or lamb steaks chopped into chunks)
  • 1 yellow pepper

Instructions

  1. In a food processor add the coriander, garlic, chilli and coconut oil together to form a paste. Add a little extra olive oil or coconut oil if it's too thick and a little salt and pepper.

  2. Places the lamb pieces to a bowl and add the marinade. Mix them together so the lamb in coated.

  3. Leave to marinade for a few hours or use straight away.

  4. Add alternating pieces of lamb and fresh pepper to kebab sticks.

  5. On a medium heat add a little olive oil to a non stick pan. Add the kebabs and turn every few minutes to cook on each side. Of course you could always cook them on the BBQ.

  6. Serve straight away with salad or let them cool for picnics or lunch boxes.

    These look lovely. I really enjoy lamb and don’t get to eat it very often. Love the sound of the marinade too!

      Thank you so much Ceri, I didn’t eat it much until I started getting it in mince form. It’s now my go to for meatballs and pasta sauces.

    I love coriander and had no idea you could get flavoured coconut oil, bet these kebabs are amazing:-)

    Lamb kebabs always go down well on a bbq and these look delicious. I am loving the sound of the marinade.

      I love a kebeb but hate remembering to marinate them. These are perfect for quickness and now my go to recipe.
