Mozzarella and Chilli Pesto Pasta
This is a very easy pasta dinner to make and also works really well to make in batches for a lunch box. Sometimes I add in cooked chicken of cured meat to add something special.
Ingredients – serves 2
-250g dried pasta
-3 tablespoons of pesto (red and green work well)
-2 tablespoons of olive oil
-120g mozzarella pearl balls or shredded mozzarella ball.
-200g cherry tomatoes
-small bunch of parsley
-chilli to taste
-salt and pepper
-Cook the pasta as to the instructions on the pack.
-Chop the tomatoes, onion, parsley and chilli.
-Once cooked, drain the pasta and add the pesto, oil and all the ingredients and stir in well.
-Set aside to cool if you want it for lunchboxes.
