Roast Chicken Breasts with Orange
I know it might sound weird to cook chicken in orange juice but it honestly works and is a brilliantly easy dinner to make. Plus the juice makes a wonderful gravy to serve with the chicken.
-4 chicken breasts
-500ml orange juice
-200ml boiling water
-1 chicken stock cube
-Salt and pepper
-Herbs de Provence
-Preheat the oven to 160ºC.
-Place the chicken breasts in a oven proof tin.
-Pour over the orange juice. Sprinkle the chicken with salt, pepper and herbs de Provence.
-In a jug dissolve the stock cube in the water. Add it to the chicken and orange juice.
-Cook for at least 60 minutes.
-Serve with a range of roasted vegetables and boiled baby potatoes.
