Simple Supper – Chicken Quesadillas
This simple supper is one of my all time favourites and I make it a lot!
I make up a batch of tasty spicy chicken using chilli sauce and sweet chilli sauce to make them hot and spicy. Once cooked I use some for dinner and then the rest I freeze in ready to go portions so I can make it later. Plus precooked and chopped up smaller makes it defrost very quickly. It’s also nice to enjoy in salads and sandwiches for lunch boxes.
My take on chicken quesadillas is one of a simplicity and as you cook them when you need them you can include all the flavours and ingredients you want. I love them spicy with lots of fresh chillies, coriander, red onion, peppers and tomatoes. A good amount of cheddar cheese is important to help them stick together when cooking. You can make this in a pan and then flip them over to get the tortilla toasted on both sides. I prefer putting my sandwich toaster to good use as it cooks, flattens and toasts all at the same time and takes only a minutes or two to cook each one.
Ingredients – Serves 4
-4 chicken breasts – I like to cook mine in a Nandos spicy sauce or sweet chilli sauce which makes them sticky too.
-1 red onion
-2 cloves of garlic
-a handful of fresh coriander
-grated cheddar cheese
-Mexican dip selection
-Chop up and cook the chicken in a sauce to taste.
-Chop all the ingredients up and turn the heat on the saucepan so it’s good and hot. (or turn the sandwich maker on)
-Fill one side of the tortilla with all the toppings you want and make sure there is a good barrier of cheese to help each side stick together. I love putting salsa, guacamole and sour cream in the tortilla so it’s hot but others prefer to dip the cooked quesadillas in them after.
-Cook each side in the frying pan and serve straight away. The sandwich toaster works very quickly and cooks both sides so no need to flip them.
-Serve and enjoy x
