Passionfruit Lemonade Ice Lollies

It’s the season for ice lollies and sitting in the sunshine.

After making the very tasty pomegranate mocktail ice lollies last week I wondered if my favourite of all summer drinks would work in lolly form – passionfruit lemonade.

Oh boy it did! The finished lollies don’t look very special but they taste is wonderful.

I used the lovely little lolly maker from Sainbury’s to make these.

-Make up portion of passion fruit lemonade – take 2 passionfruits and add the seeds to a 2 litre bottle of lemonade. (Don’t use diet as it doesn’t taste as good)
-Leave overnight for the lemonade to absorb the passionfruit flavour.
-As the passionfruit floats in the lemonade, when making up the lollies it’s a good idea to freeze it in 2 or 3 sections, a few inches at a time so the seeds are throughout the lolly. Make sure you don’t fill right to the top as the liquid will expand slightly in the freezer.
– Leave for a few hours until frozen.

– Enjoy in the sunshine!

      Thank you. They don’t look amazing but they taste more than makes up for it!
