Poached Eggs

I am boiled egg kind of girl mostly because its the only thing I can make easily and without having to think about it too much.
This weekend just gone I tried poached eggs for the first time after seeing them on the British Lion Egg website. I knew I liked them a lot but it is weird dropping eggs into water as you think they’d fall apart but nope something magic happens and they cook beautifully.

I still have a way to go with cooking them perfectly but for a first go I was very impressed. I steamed some spinach to go with it as that’s what my dad does when he makes them. We used a little hollandaise sauce to drizzle over it too and it was spectacular. I love how a simple egg could be the centre of everything so tasty.

I used the poached egg recipe from British Lion Eggs who have a really lovely collection of recipes on their website all which use the magic ingredient of eggs. If you have some left over eggs and are not sure what to make, take a look and I’m sure you’ll find something that works perfectly.

I am really surprised there could be so many ways to make poached eggs! I will certainly be trying a few of the other versions of it soon. The warm lentil salad looks amazing.

I’m going to be working on my omelette next. So far they usually turn into scrambled eggs but I’m willing to eat it and enjoy it all in the name of trial and error.

    Mmmm. The poached eggs look wonderful. My husband has a clever trick to make them perfectly shaped. He drops the raw egg into clingfilm, squeezes it shut, and poaches it for the required time.
