Pomegranate Mocktail Ice Lollies

It’s ice lolly week and I have been experimenting with lovely flavours and having the hard job of trying them all. I was sent a fabulous ice lolly mould from Sainsbury’s to try out and come up with my own recipe.

My final and favourite recipe I tried was a pomegranate mocktail lolly. It doesn’t look amazingly exciting but it tastes blooming good! I make a pomegranate mocktail for friends and as it tastes amazing I wanted to see how it would taste as an ice lolly.

-750ml of pomegranate juice
-250ml of sparkling water
-3 tablespoons of lime juice. More if you like a stronger lime taste.
-pomegranate seeds

Mix together the pomegranate juice, water and lime and pour into the ice lolly mould up to about a 1cm from the top.
Pop in a teaspoon of pomegranate seeds and pop them in the freezer.

It’s very easy and very tasty.

The ice lollies are smooth, refreshing and thirst quenching and perfect for a hot day.

As the pomegranate juice is thick the seeds disappeared in to it which made more of a nice surprise to find them as you enjoyed the lolly.

Happy lolly making ๐Ÿ™‚ freezing fruit juices is a happy thing indeed.
