Rice Pudding Ice Cream
I saw Nigel Slater’s TV programme a few weeks ago and he made rice pudding ice cream. It sounded too good to be true and had to be made.

The vanilla pods in the rice pudding smelled amazing as it was cooking. I would recommend making sure the rice pudding base is properly cooked all the way through. It needed a lot longer than the recipe said. I think it took about 45 minutes instead of 30. It was important to constantly keep stirring as it kept trying to stick the bottom of the pan.
Fresh cherries and chocolate ready to be added. I used a bar of chocolate and used a sharp knife to cut the pieces off. I’m sure chocolate chips would have worked as well.
Here is the ice cream about to go into the freezer. The rice wasn’t completely cooled so the chocolate melted a little when it was added.
A few hours later and it was set!
Sliced open and served. It was wonderful. The texture was slightly weird as I’d never had anything like it. The taste was odd too but the more you ate the better it got. It was a nice summer treat on a hot day but I think it would equally work as a hot rice pudding with cherries and chocolate.
