Sweet Potato and Butternut Squash Spiced Soup
I wanted to make a simple yet delicious soup and I did.
I was sent this fabulous box of vegetables from the New Covent Garden Soup Co encouraging me to make soup and try their new range of Souper Boosters. These new soup boosters are full of flavour and help add an interesting hit of extra seasoning to the soup. They aren’t the strongest flavour but they add something pleasingly extra to the soups. They have Roasted Moroccan, Mexican Chilli, Wild Garlic and Herb and Aromatic Thai. They also work so well in pasta sauces and in stocks for roast dinners too!
While photographing the box my cats loved the vegetables. Who knew that cats liked chewing on leeks and carrots. Thought I should include this photo as it’s so cute and amusing.
-2 cloves of garlic
-1 red pepper
-2 medium sweet potatoes
-2 vegetable stock cubes
-2 pints of water
-half a butternut squash peeled and chopped up
-salt and pepper
-1 tabelspoon of Roasted Moroccan Souper Booster
-Peel and chop the onion, garlic and pepper and soften with a tablespoon of oil in a large saucepan.
-Peel and chop up the potato and add it to the pot with the stock and water. Leave on a medium heat.
-Add the butternut squash and tablespoon of Moroccan souper booster.
-Bring the soup to the boil and allow to simmer until the potato and squash has cooked.
-Using a hand blender whizz it up.
-Add a little salt and pepper to taste.
-Serve and enjoy. Add a swirl of creme fraiche to make it super cute – it also works well if you’ve added too much chilli.
If you want to add a little spice add little red chilli with the red pepper.
