Lemon Ginger Flapjacks – Gluten Free

The Royal Wedding of Harry and Meghan provided a great inspiration for baking. I’ve joined in for my local street party with these lemon and ginger flapjacks. They are a perfect homemade party food, they also make great edible gifts.

With so many delicious cakes being made I wanted to try something little different. However still as delicious and special for my local party. Any excuse to bake and at a tea party this week. I also wanted to make something special for those who were gluten free. From there the Lemon Ginger Flapjacks were created. I tested out a few versions of this recipe and this is one I love the most. It’s got that earthy richness from the ginger but is also bright and zesty from the lemon. A perfect combo combined in a soft flapjack with slightly crisp shell. If you like your flapjacks more crispy you can cook them for longer.

These are tasty! I love flapjacks for Gluten Free options at parties or for gifts but I decided to make them extra special by adding the iconic lemon and ginger flavours. I don’t think are that common in flapjacks but they should be. They taste sweet but manage to keep their lemon juicy boost. The flavours make them taste very light and they are perfect to enjoy with a cup of tea while watching the wedding on TV or at your own street party.

Although not the exact same as the lemon flapjack graze recipe this is pretty close to that. It has had lovely lemon drizzle which takes the flapjacks to the next level. They are both great for spring and also great for autumn when you have some colder weather and the ginger adds that warming boost.

Lemon Drizzle Flapjacks

I’ve added a drizzle to these flapjacks because adding extra lemon is only a good thing. To make the lemon drizzle to turn them into lemon drizzle flapjacks I made the simple icing sugar, water and lemon juice. Plus a little extra lemon zest to go along with it. Add the icing sugar to a bowl – make sure you sieve it in to remove any lumps. Add a table of lemon juice. Fresh is best but if you don’t have that bottled will work well too. Add the zest, a pinch will be perfect and mix it together. Add some water to make it a smooth and drizzly texture.

When the flapjacks are out of the oven, slice them up and drizzle the icing mix gently over them. I’ve done a zigzag drizzle on these bakes as I didn’t want too add too much extra sweetness. But if you love icing and have a massive sweet tooth then go for it. Pour it over and enjoy. Leave to set slightly before eating as they will be very very sticky.

Fresh ginger flapjacks

I have used ground ginger in this recipe for easiness but you can equally make delicious fresh ginger flapjacks too. You would need grate the fresh ginger to make it juicy and easy to mix in. Be careful with your fingers though. Fresh ginger is a slippery thing to use with a grater. If you use fresh ginger add it to the oats before you put it in the tin to bake. Fresh ginger has such an incredible taste that the fresh ginger flapjacks will be delicious.

Stem ginger is also a good thing to add if you like the fiery taste. Chop it up and stir in with the oats before adding it to the tin to bake. Depending on how much you like it you can leave some bigger pieces in to the mix to find later. They will be gorgeous stem ginger flapjacks.

Easy Gluten free flapjacks

This really are the best recipe for easy gluten free flapjacks. I have a few gluten free friends who I have tried this on time and time again and they also go down so well with them. It’s the best feedback really. For this recipe you combine most of the ingredients into a pan and let them melt down. You then mix them together and stir in the oats. It is really that easy.

If you want to make it extra special try adding some white chocolate too.

Orange and Lemon Flapjacks

If you aren’t too fond of ginger then you can of course leave it out and make these lemon flapjacks. However if you are looking to play about and get creative in the kitchen this recipe is hugely versatile. I love making orange and lemon flapjacks. The addition of extra citrus is only a good thing in my opinion. Orange and lemon work so well together but if you are going to use them together make sure you add the zest from both. The zest is the key ingredient. Add the orange zest and lemon zest will keep that flavour extra strong and absolutely gorgeous in the finished flapjacks.

Royal Wedding Lemon Ginger Flapjacks

These were such a massive hit at the street party. It was great being able to bake something for my gluten free friends that as they said “looked as good as everyone elses cakes”. The little bit of icing adding some sweet to the lemon and ginger flavours in the flapjack. There wasn’t a crumb left to enjoy at the end of the day. An important question was what is best – the crisp edge pieces or squidgy inside piece?

Lemon and Ginger Flapjacks – Royal Wedding Bake

With the Royal Wedding proving a great inspiration for baking I've joined in for my local street party with these lemon and ginger flapjacks.

Ingredients

  • 250 g condensed milk
  • 250 g golden caster sugar
  • 3 tbsp heaped golden syrup
  • 300 g unsalted butter
  • 600 g Gluten Free oats don’t use instant porridge oats
  • zest and juice of 2 lemons
  • 2 teaspoons of ground ginger
  • 100 g icing sugar
  • a few drops of lemon juice

Instructions

  • Preheat the oven to 160ºC and line 9 x 12 inch tin with greaseproof paper. It helps getting them out easily.
  • Add the butter, golden syrup, sugar and condensed milk to a saucepan. On a low heat melt together and keep stirring until all combined.
  • Remove from the heat and stir in the oats, lemon zest, lemon juice and ground ginger.
  • Spoon into the tin and level off.
  • Cook for about 20 minutes until light golden brown.
  • Cut them while they are still hot and leave to cool.
  • I like a little drizzle of lemon icing on them but they taste really good without too.
  • Mix the icing sugar with a few drops of lemon juice until you get a good slightly runny consistency. Drizzle over the flapjacks and enjoy.
