Sugar and Crumbs Valentine’s Day Meringues

January 13, 2015Sew White

To celebrate Valentine’s Day I’ve been asked by the fantastic Sugar and Crumbs to use their wonderful icing sugars in a meringue based treat. I’ve only made meringues a few times before so I wasn’t hugely confident in my own abilities. I decided to take the chance and I created something that my mum described as the best things I’ve ever made (she has tasted nearly everything I’ve ever made so she knows what she’s talking about). I give you my warm fruit, chocolate and meringue pudding. It’s a black forest inspired pudding and it’s delicious. I’m sure it’s obvious how much I love black forest and this was an excuse to make something with my favourite flavours.

I used the Sugar and Crumbs natural flavoured black forest icing sugar to add a booster flavour to the meringues. It really does pack a big punch and is so beautifully fine to use for baking. The flavour was so much stronger than I ever thought it would be and I’m glad I didn’t use it all so I have some more to play with. I love everything black forest flavoured. I was really impressed with the flavour from the icing. I’ve tried flavoured icing before which were a let down and didn’t really taste of anything. This icing had a strong flavour and it fits perfectly to what I would describe as black forest. The smell is really delicious too!

The cocoa powder mix with the Sugar and Crumbs flavouring made the meringue slightly brown but still very shiny. As they were going to be in a purple pudding I was tempted to add some purple food colouring but I think keeping them this colour worked very well with the fruits and cream. It was nice to have a mix of textures, colours and flavours in the final pudding.

The meringues were so delicious. A crisp shell and still gooey sticky centre. YUM! I was surprised how much darker they were in the middle but I have enjoyed eating them a lot! I had to make sure I ate a few to make sure they all tasted good (that’s my story and I’m sticking to it). Crushed up and with the fruit they are so delicious and taste of black forest with the cocoa and fruit all compliment each other really well.
