This easy apple blackberry galette is a simple dessert which always looks like a show-stopper. It only takes a few ingredients to make which is also a bonus. The jam glaze on the apples at the end is definitely a step not to be missed!
Place the 175g plain flour and pinch of salt into a mixing bowl and add the 90g of butter cut into cubes.
Rub the flour and butter together with your fingers to make what looks like bread crumbs.
Using a normal knife stir in the 2 tablespoons water little by little until the dough as come together.
Wrap the dough in cling film and place in the fridge for at least 30 minutes.
Making the apple and blackberry galette
Preheat the oven to 200ºC fan / 400ºF.
With the pastry at room temperature, roll out and place on a baking tray.
Core and slice the 2 apples and place in a bowl with the 2 tablespoons of maple syrup, 1 tablespoon of lemon juice, 2 tablespoons of granulated sugar, half a teaspoon of cinnamon and half a teaspoon of ground ginger. Give it a good stir.
Place the apple, maple syrup and spice mix over the pastry leaving 2 inches around the edge.
Fold the pastry boarder in the centre to make a case and add the blackberries.
Lightly beat the 1 egg with the 1 tablespoon of milk and brush the pastry case, sprinkle with a little granulated sugar.
Bake for 25-30 minutes - until golden brown. After the first 10 minutes reduce temperature to 180ºC. (or cover with aluminum foil)
While it’s cooking, mix together the jam and water. When the galette is cooked, remove it from the oven and using a pastry brush, brush the jam mixture over the apples.
Serve and enjoy hot.

It's fun to make the pastry by hand but you can easily make this recipe using 1 sheet of ready-made shortcrust pastry from the supermarket.
