Chocolate Smarties cookies are just fantastic. A delicious chocolate cookie stuffed with Smarties and decorated with them too. This a great recipe to make with kids and for big kids too. This chocolate Smarties cookies recipe is a lovely party food and I love taking them on picnics too.
Preheat the oven to 180ºC degrees / 160ºC degrees fan / Gas mark 4/ 356ºF.
Prepare baking trays by adding a layer of baking parchment/greaseproof paper.
Cream together the butter and sugars until light and fluffy.
Mix in the eggs one at a time. Followed by the vanilla extract.
Sieve in the flour, cocoa, bicarb of soda, baking powder and salt into the bowl.
Mix it all together to form a thick dough.
Mix in half of the Smarties. (Saving the rest to stud the top)
Use a ice cream scoop or dessert spoon to scoop 12 large cookies on to the baking tins. Make sure the cookie heaps are far away from each other as the cookies will spread.
Stud the cookies with the remaining Smarties.
Bake for 10-15 minutes.
If using an air fryer cook them 3 at a time at 170ºC for 8 minutes.
Notes
Swap out the Smarties for dried fruits, nuts or even more chocolate chips.
The consistency should be slightly sticky. Add a little splash milk if it is too dry.
