Apple, Ginger and Lemongrass Cake

  • 50 g stork margarine
  • 150g self raising flour
  • 50g light brown soft sugar
  • 1 teaspoon of ground ginger
  • 500g of chopped eating apples
  • Grated rind of 1 orange
  • 4 tablespoons of Bottlegreen Ginger and lemongrass cordial
  • 1 medium egg


  • Preheat the oven to 180 degrees (160 fan).
  • Line and grease a 8inch cake tin
  • Rub the butter and flour together to make bread crumbs.
  • Add the sugar and ground ginger and stir in.
  • Peel, core and chop the apples and to the mix with the orange rind.
  • Add the egg and cordial and mix in well.
  • Bake for 30-40 minutes until firm and golden brown.
