It's safe to say we will always have leftover meat after Christmas. Goose is a great alternative to Christmas turkey and I think tastes so much better. It is also brilliant for cold cuts the next day. After the giant roast on Christmas day, it's these leftover goose wraps that are the perfect way to use up leftover goose for a fun healthy meal.

Ingredients
1portion cooked goose
10tortilla wraps(use them full size or use a cookie cutter to make them smaller)
1Romaine lettuce
1carrot
1red pepper
quarterred cabbage
1lime
1tablespoonchilli sauce
Instructions
Take the tortilla wraps and either have them full size or using a cookie cutter make them into bitesize sizes.
Shred the lettuce and add to a bowl.
Peel and slice the the carrots and add them to the lettuce mix.
Slice the red pepper, removing the seeds. Add the slices to the bowl and mix together.
Carefully slice the red cabbage into thin slices.
Drizzle the salad with lime juice and a little olive oil. Add a drizzle of sriracha sauce if you want to add a fiery kick to the wraps.
Give the salad a good stir to mix everything together.
Shred the leftover goose using two forks. You can microwave it to be hot goose but cold works really well too.
Assemble the wraps with a mix of salad and goose.
