For this easy small batch strawberry compote recipe, you only need 2 ingredients to create a beautiful berry compote. This healthy strawberry compote is perfect for use on pancakes, cakes and is brilliant on french toast too. This is a one punnet of strawberries compote so you can reduce food waste and just make as much as you need. A must have compote for pancake day.

Instructions
Hull and chop the 250g strawberries and add them to the saucepan.
Add the zest and juice from half a lemon, along with the juice from half the lemon and the optional 2 tablespoons of sugar.
Place the saucepan on a low heat and allow the strawberries to break down, the lemon to mix and optional sugar to dissolve.
After 5 minutes the mix should be juicy and still have some chunky pieces of strawberry in. It is now ready. You can keep it cooking to make it thicker if you want.
Remove from the heat and serve straight away if you want it hot. If you want it for a cheesecake or cake make sure it has cooled before use.
Notes
I use half a lemon for this recipe. Half the zest and then half the juice. It is much easier to zest the lemon before cutting it in half.
Easily turn this compote recipe into the coulis recipe by putting the finished compote into a blender to make it smooth.
Perfect as a compote for french toast, pancakes or as a cake filling.
