In this quick and easy roast baby carrot recipe, I create a simple and delicious way to make this brilliant side dish. I parboil the baby carrots to get their roasting time even quicker. This is brilliant for when you're making a big roast dinner and might be running out of space in the oven. you can even parboil the carrots earlier in the day and roast them when you're ready.
Add in the carrots and cook for 5 minutes. We want them partially cooked.
Remove them from the water and place them into an oven proof dish or tray.
You can leave them to get cold if you want to finish roasting them later. A great get ahead idea.
Sprinkle the carrots with salt and pepper. Add a sprig or two of rosemary.
Drizzle the carrots with olive oil.
Roast in the oven for 8-10 minutes. Serve straight away and enjoy.
