In honour of the Queen's Platinum Jubilee, I have teamed up with Quorn to create a quick and easy party food that is perfect for your jubilee party. In my Quorn lettuce cups, I use Quorn Mince, fresh mini sweet peppers, red onion and a mix of delicious spices to create a mince filling for the lettuce cups.
Slice the tomatoes, chilli, cucumber and carrot into small pieces and put on a plate to serve with the Quorn mince lettuce cups. Slice the lime into wedges to drizzle over the lettuce cups.
Quorn Lettuce Cups
Peel and slice the red onion, along with the mini sweet peppers.
Place a frying pan on a low to medium heat. Add the olive oil along with the red onion and mini sweet peppers.
Soften gently and after a few minutes add in the Quorn mince and stir.
Mix the spices together and mix in.
Cook and keep stirring for 5 minutes then remove from the heat.
Cut the bottom off the little gem lettuces and place all the leaves on a large serving plate.
Spoon the mix of Quorn, onion and peppers into the lettuce cups and you are ready to serve.
Notes
As this can be served cold you can make the filling for the lettuce cups ahead of time.
Store any leftovers in an air tight container in the fridge.
