Royal Lettuce Cups – Easy Quorn Lettuce Cups

In honour of the Queen’s Platinum Jubilee, I have teamed up with Quorn to create a quick and easy party food that is perfect for your jubilee party. In my Quorn lettuce cups, I use Quorn Mince, fresh mini sweet peppers, red onion and a mix of delicious spices to create a mince filling for the lettuce cups.

QUORN MINCE

Quorn Mince is a meat-free and high in protein vegetarian mince. It is a great replacement for beef or lamb mince and it is hugely adaptable for recipes. As well as this recipe you can also use Quorn Mince for bolognese, chilli and even burgers.

MINI SWEET PEPPERS

I love these mini sweet peppers. They are packed full of flavour and can be eaten cooked or uncooked.

RED ONIONS

The red onion adds gorgeous colour to the finished Quorn lettuce wraps but also a slightly sweet flavour too.

SPICES

To keep this recipe simple I used common spices that I hope most people have. Chilli flakes, ground cumin, ground coriander, smoked paprika. The mix is earthy with a bit of heat a perfect combination for the lettuce cups.

How to make – step by step

  • Peel and slice the red onion, along with the mini sweet peppers.
  • Place a frying pan on a low to medium heat. Add the olive oil along with the red onion and mini sweet peppers.
  • Soften gently and after a few minutes add in the Quorn Mince and stir.
  • Mix the spices together and mix in.
  • Cook and keep stirring for 5 minutes then remove from the heat.
  • Cut the bottom off the little gem lettuces and place all the leaves on a large serving plate.
  • Spoon the mix of Quorn, onion and peppers into the lettuce cups and you are ready to serve.

Serving suggestion – Slice the tomatoes, chilli, cucumber and carrot into small pieces and put on a plate to serve with the Quorn Mince lettuce cups. Slice the lime into wedges to drizzle over the lettuce cups.

As this recipe is delicious hot or cold it makes a perfect party and picnic food. It also means you can make it on the day you need it or even the day before and store it in the fridge.

Serving Suggestions

  • The Quorn lettuce wraps are best served for your summer parties. They make great tasty bite-size treats which your guests can help themselves to.
  • I serve the lettuce cups with a side dish of thinly sliced vegetables which you can add to the wraps for extra taste. My top picks have to be fresh chilli, tomatoes, cucumber, carrot, and fresh coriander.
  • Squeeze fresh lime over the Quorn lettuce cups just before you eat them. It’s a delicious flash of citrus that works so well with the spices.

Storing / Making ahead of time options

The best part of this recipe is you can make it ahead. I’ve made it on the day I needed but you could also do it the day before and keep it in the fridge. As it can be served hot or cold it’s brilliantly versatile.

Ingredients
 

Quorn mince lettuce cups

  • 350 g Quorn Mince
  • 1 red onion
  • 2 mini sweet peppers
  • 2 tbsp olive oil
  • 2 little gem lettuce

Spice Mix

  • 0.5 tsp chilli flakes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp smoked paprika
  • pinch salt
  • pinch pepper

Topping options

  • 0.5 cucumber
  • 1 carrot
  • 1 chilli
  • 1 lime

Instructions
 

Toppings (optional)

  • Slice the tomatoes, chilli, cucumber and carrot into small pieces and put on a plate to serve with the Quorn mince lettuce cups. Slice the lime into wedges to drizzle over the lettuce cups.

    This is great. I have been thinking about using Quorn for a while as we are trying to cut down on meat. I thought it was really only good for a pasta sauce but this recipe will be spot on for a party I have coming up where we have vegan guests.
