These air fryer carrots and parsnips are the perfect way to add delicious vegetables to your roast dinner. A simple and easy air fryer side dish for a summer roast dinner or with a Christmas feast.
Peel and chop the carrots and parsnips. (Thinner strips will cook quicker).
Add the carrots and parsnips to the air fryer basket. Drizzle with olive oil and season with salt, pepper and mixed herbs.
Air fry the carrots at 180ºC / 356ºF for 12-15 minutes. (If they are thicker cut they will need a few extra minutes). They should be slightly crisp on the outside and soft in the middle.
Serve and enjoy.

As a rule, I tend to do 1 medium carrot per person.
The carrots can be peeled and chopped in advance and kept in the fridge until they are needed. They will last about 2-3 days.
