Start by washing and chopping your carrots and parsnips. You can either peel your veggies or leave them skin on.
Drizzle a little bit of oil and salt and pepper over your veggies and switch on the air fryer. Cook your air fryer roast carrots and parsnips at 180 degrees for about 15 minutes.

Storing / Making ahead of time options
Air fryer roast carrots and parsnips are best when they are served warm from the air fryer. If you do have some left over after dinner you can store them in a Tupperware in the fridge for a few days.
When you’re ready to reheat them, microwave them in bursts until the carrots are hot all the way through. Air frying them again will dry them out.

Air Fryer Carrots and Parsnips
Equipment
Ingredients
- 2 (2) carrots
- 2 parsnips
- 2 tbsp (2 tbsp) olive oil
- pinch (pinch) salt and pepper
- pinch dried mixed herbs
Instructions
- Peel and chop the carrots and parsnips. (Thinner strips will cook quicker).
- Add the carrots and parsnips to the air fryer basket. Drizzle with olive oil and season with salt, pepper and mixed herbs.
- Air fry the carrots at 180ºC / 356ºF for 12-15 minutes. (If they are thicker cut they will need a few extra minutes). They should be slightly crisp on the outside and soft in the middle.
- Serve and enjoy.
Notes
- As a rule, I tend to do 1 medium carrot per person.
- The carrots can be peeled and chopped in advance and kept in the fridge until they are needed. They will last about 2-3 days.
