A Christmas classic, sharp and bitter sprouts are on everyone’s table at this time of year. They are known for being the worst vegetable in the Christmas dinner but I am setting out to change that. Try frying them with garlic and butter and even add some bacon too.

Carrots

In my opinion roast carrots are one of the best vegetables you can get. Their sweetness is addictive and the edges crisp up perfectly. You can roast them easily in the air fryer with just some olive oil and salt.

Olive Oil

Finally, a little olive oil adds even more health benefits to this roast carrot and sprout recipe. Olive oil is sworn by by many of the Mediterranean countries. It’s subtle flavour really enhances this recipe.

Remove the outer layers of the Brussels sprouts and cut them in half for a quicker cooking time. You can keep them whole if you want.

Peel and chop the carrots. I prefer the carrots cut round but you could also do batons parboil them for less time.

Boiling the sprouts

Boil a saucepan of water and parboil the sprouts for 3 minutes followed by the carrots for 5-8 minutes depending on size.

Add both of the vegetables to the baking tin that fits in the air fryer.

Ingredients
 

  • 400 g Brussels Sprouts
  • 2 Carrots
  • Olive Oil
  • Salt and pepper
  • 2 cloves Garlic (or 1 teaspoon of crushed or easy garlic)

Instructions

  • Roast the sprouts and carrots for about about 5 minutes if cut in half and 6-8 minutes for whole sprouts. I prefer the sprouts to be slightly crispy so normally add a minute or two extra. Give them a stir halfway through cooking.
  • They are ready to serve.
