Indulge in a festive taste sensation with these divine cranberry brie bites. These cranberry brie puff pastry bites are the perfect Christmas canapes and will be the hit of your Christmas party. Puff pastry, cranberry sauce and of course delicious brie to tie it all together.
Remove the puff pastry from the fridge and allow it to come up to room temperature as it will make it easier to unroll.
Preheat the oven to 200ºc / 400ºF / Gas mark 6.
Unroll the sheet puff pastry on a lightly floured work surface. Cut the sheet into 12 squares.

Gently push the puff pastry pieces into the 12 hole cupcake tin. (If it's not non-stick it might be worth adding some greaseproof paper/baking parchment to help release them later.)
Chop up the brie into bitesize pieces and add them to the puff pastry.
100 g Brie cheese
Add a teaspoon of cranberry sauce on top of the brie.
1 jar cranberry sauce
In a small bowl whisk up the egg and using a pastry brush, brush the beaten egg over the pastry.

Bake in the oven for 15-20 minutes until golden brown.
Serve them hot with a fresh mini sprig of rosemary.

Once you have assembled them before baking you can place the baking trays in the fridge until you're ready to bake them. A great get-ahead festive treat.Store any leftover Cranberry Brie Bites in an airtight container in the fridge for 2-3 days.If you want to reheat them then you can put them into the microwave for 20-30 seconds. You could also reheat them in the air fryer or over to warm them through. You can also eat these Cranberry Brie Bites at room temperature.If you want to freeze for later then assemble the bites and freeze them before baking. Then cook from frozen when you are ready. You might need to add 2-5 minutes to the cooking time.
