Brie
Not your typical baking cheese, brie has such a unique flavour that makes it perfect for pairing with flaky pastry and tart cranberry sauce. You don’t need much for each cranberry brie bite, leaving just enough for you to snack on while you bake!
Cranberry Sauce
Cranberry sauce is a staple at Christmas in my house. It’s sharp and full of flavour. You can make your own if you’re feeling fancy or just pick some up from your local supermarket.
Puff Pastry
I have no time to bake at this time of year so I use shop-bought pastry in this brie and cranberry recipe. It’s easy to use and saves me a huge amount of time; pre-made pastry isn’t expensive either so it won’t you to be lazy like me!

Top Tips
Serve these delicious cranberry brie puff pastry bites while they are warm from the oven. The hot pastry and melted cheese is to die for.
Brie and cranberry parcels can be a little tricky to get out of the tray, so to make life easier put some greaseproof paper in the bottom. This stops the pastry from sticking to the tin.
Use shop-bought pastry to speed up the prep time for brie cranberry bites. Making puff pastry is time-consuming and quite difficult. SO using pre-made or pre-rolled pastry is a great way to get these cranberry brie puff pastry parcels on the table quickly.
Keep the brie cold as it is a lot easier to slice when chilled. It also holds it’s shape as you assemble the cranberry brie bites.
Brie cranberry bites – Serving Suggestions

Cranberry Brie Bites Substitutions and variations
Change the cheese
If brie isn’t available or you want a different flavour, try camembert, goat cheese or even stilton. These cheeses melt well and have a creamy texture.
Add nuts
If you want to add an extra twist to this delicious recipe you can add chopped nuts like pecans and walnuts. Add them to the bites just before baking. they both work well with cranberry and creamy cheese.
Season with herbs
Add a sprinkle of fresh thyme or rosemary on top of the cranberry and cheese before baking for a herby, aromatic touch.
Sweet Chilli Sauce
Add fire to the recipe by drizzling them with sweet chilli sauce. The sweet and spicy sauce perfectly complements to the creamy cheese, flaky pastry and brie.
Fruit
The best fruit to add to these brie and cranberry parcels is chunks of fig. It’s a little extravagant but a real show-stopper at Christmas parties. If you want something simpler, add dried fruits just prior to baking.
Honey
Honey and brie are a match made in heaven. The sweetness and saltiness of the cheese pair wonderfully together. Just drizzle honey over your brie cranberry parcels when fresh from the oven.

You don’t have to cut the rind off brie before baking it in puff pastry. The rind is completely edible and softens nicely as it bakes.
