The creamy white chocolate and sweet cranberries are fantastic together in these oat cookies. Cranberry and oatmeal cookies are loved by the whole family and Santa has enjoyed them too when we've left them out for him. 40gdark brown sugar
80gplain flour / all purpose flour
¼tspof baking powder
tiny pinch of salt
100gof white chocolate chips
½tspof ground cinnamon
¼tspof mixed spice
Preheat the oven to 160ºC Fan/180ºC normal oven.
Cream together the butter and sugars.
Add the egg and mix in.
Sieve in the flour, baking powder and salt.
Add the spices to the mix.
Mix in the oats. Add a tiny splash of milk if the mix is too dry to mix
Add in the dried cranberries and white chocolate chips. Give it a good stir.
Put heaped teaspoons of the cranberry white chocolate cookies to greaseproof paper lined baking tray. Make sure the cookie heaps are far away from each other as the cookies will spread.
Gentle push and flattern out.
Bake for 10-15 minutes.
Enjoyed hot or cold but best when the cookies are still warm.
•They will last for a few days in an air tight box if you don't eat them all first.
