Cranberry and oatmeal cookies are loved by the whole family and Santa has enjoyed them too when we’ve left them out for him. These finished results of these cranberry white chocolate oatmeal cookies are delicious crunchy & soft cookies which are the perfect Christmas cookies.

This Cranberry White Chocolate Cookies recipe is a mix of about 3 recipes I have mixed together over the years to make this yummy recipe for my favourite Christmas cookies. Warning these cookies won’t last long! They are just too yummy. This is also a really quick recipe. The whole making and baking to eating took less than 40 mins.
I love the mix of cranberries and white chocolate. I’d put them in everything if I could. These biscuits are oaty, chocolatey and fruity in one bite and I think it makes them the perfect cookie. I love using my little sherry glasses for milk at Christmas. It seems so quaint and happy.

Delicious Crunchy & Soft Cookies

I love seeing the red cranberries and white chocolate ready to be mixed in. I tend to chop up half of the cranberries and leave the other half whole so there is a mix of sizes and each cookie will definitely have a good mix of fruit and chocolate. If you want to make them really indulgent, drizzle white chocolate over the finished cookie.

How to make Cranberry and White Chocolate Cookies
Step by step white chocolate cranberry and oat cookies recipe UK



- Cream together the butter and sugar.
- Mix in the egg and stir well.
- Add the spices to this mix.



- Sieve in the flour, baking poder and salt. Mix well.
- Mix well and enjoy the smell.
- Stir in the oats. Add a tiny splash of milk if the oats make it too hard to mix.



- Add in the white chocolate and dried cranberries.
- Divide into little balls.
- Lay on a baking tray allowing room for them to expand. Bake!
White chocolate cranberry cookies oatmeal
Oatmeal is a type of coarse flour that has been made of hulled oat grains that have either been milled or steel-cut. As a rough type flour you can use it instead of the old fashioned traditional oats.
It makes the cookies a lot smoother and less lumpy so if you wouldn’t prefer a smoother taste it is worth trying. To use oatmeal in this recipe replace the oats with oatmeal of the same amount.

Lightly chop the dried cranberries so you get a little extra cranberry in every bite.

Storing / Making ahead of time options
Make ahead and store in an air-tight box for up to 3-5 days.
Freeze the dough before cooking to make them ahead of the holiday season. Defrost the dough and then cook as per the instructions below.
Substitutions and variations
You can use oats or oatmeal for this recipe. The oats are rougher and bulkier in the final cookie. The oatmeal is ground down further and creates a smoother batch of white chocolate cranberry cookies.
If you don’t like the cranberries you can easily leave them out or exchange them for raisins or other dried fruit.
You can use any type of chocolate chips for this recipe. Cranberry and white chocolate are iconic but you can change them to dark or milk chocolate too.
What can you use dried cranberries for?
Dried cranberries are a yummy and versatile ingredient which can be used in so ways. As well as these cranberry white chocolate cookies, they can be used in cakes, loafs and breads too.

These easy oat and cranberry cookies UK recipe are so easy to make and so lovely to make in the winter months. Especially at Christmas! The mix of creamy white chocolate and sweet juicy cranberries. I make so many batches of these white chocolate cranberry cookies each year. I’ve given them as cookie Christmas gifts wrapped in brown paper and string, or beautiful cellophane bag.

Can you use regular oats in cookies?
Yes you can use regular oats in cookies, in fact they work so well and I prefer using them for cookies and bakes. Regular oats are a very useful store cupboard item and can last for years in a sealed box. They are an easy addition to cookies but also add a lovely nuttiness to fruit crumbles.

Should I soak dried cranberries before baking?
You don’t need to soak dried cranberries before baking these cranberry white chocolate cookies. However, there are lots of delicious recipes where soaking the dried cranberries can add a lot more flavour.
If you wanted to make soaked dried cranberry cookies I would recommend soaking them in brandy overnight before mixing the cookies. For 75g of dried cranberries, I would recommend using two tablespoons of brandy to soak in to them.
If they are very juicy when you come to bake you can drain away any excess brandy or save it to soak more fruit later. If the cookie mix is more liquid you can add a little more flour and a few more oats to soak up the juice. Brandy infused cranberries are a wonderful thing!
Are dried cranberries the same as Craisins?
Dried cranberries and craisins are exactly the same thing. They are called craisins sometimes as they look like raisins but are dried cranberries instead of grapes in traditional raisins.

Can I use dried cranberries for baking?
Yes absolutely. Using dried cranberries for baking is a great idea. There are so many things you can bake with them. Including there cranberry white chocolate cookies, Easy Christmas white chocolate cranberry cake and cranberry flapjacks.

Cranberry White Chocolate Cookies Recipe – Easy white chocolate cranberry oatmeal cookies
Equipment
- Mixing bowl
- Mixing Spoon
- Baking Tray
- greaseproof paper
Ingredients
- 60 g unsalted butter
- 40 g dark brown sugar
- 50 g caster sugar
- 1 medium egg
- 80 g plain flour / all purpose flour
- ¼ tsp of baking powder
- tiny pinch of salt
- 60 g rolled oats
- 100 g of white chocolate chips
- 75 g dried cranberries
- ½ tsp of ground cinnamon
- ¼ tsp of nutmeg
- ¼ tsp and ginger
- ¼ tsp of mixed spice
Instructions
- Preheat the oven to 160ºC Fan/180ºC normal oven.
- Cream together the butter and sugars.
- Add the egg and mix in.
- Sieve in the flour, baking powder and salt.
- Add the spices to the mix.
- Mix in the oats. Add a tiny splash of milk if the mix is too dry to mix
- Add in the dried cranberries and white chocolate chips. Give it a good stir.
- Put heaped teaspoons of the cranberry white chocolate cookies to greaseproof paper lined baking tray. Make sure the cookie heaps are far away from each other as the cookies will spread.
- Gentle push and flattern out.
- Bake for 10-15 minutes.
- Enjoyed hot or cold but best when the cookies are still warm.

I am thinking of making a Cookie Making Kit, in a Kilner jar, using your recipe for my son’ teacher ( just the dried ingredients) for Christmas. She has young kids too so hopefully would enjoy making these with them .

I reckon if I subbed the base wheat recipe with my recipe for gluten free oatmeal cookies and added the Christmas flavours and spices, they would work just fine for a GF diet too xx
