What is so fantastic about this dish is that you don’t really need any specialised equipment. Just a knife and chopping board! If you want to cut the tortillas I would recommend using round cookies cutters.

Storing leftover goose

The easiest way to store cooked goose is to allow it cool after being cooked first. Putting hot meat straight into the fridge can cause the fridge temperature to rise and make the fridge work harder to cooler it again. It can also cause bacteria to spread.

Once the goose is cooked slice it up and put it into an air tight container or on a plate wrapped with film or aluminium foil. The goose will last in the fridge for a few days. I would recommend eating it within 3 days. Storing leftover goose is easy and storing it in the fridge to eat later helps reduce food waste.

Substitutions and variations

The easiest way you can substitute and make variations for this leftover goose wrap recipe is change the meat.

  • You can replace the leftover goose for leftover turkey, chicken, pork or even turn it vegan by using leftover vegetables.
  • Salad options can change depending on what you have in the fridge.
  • Red onion is a really nice addition to give a sharp and tangy bite.
  • Adding hot sauce to add some spice to the wraps. I love adding sriracha to my wraps.
  • Add leftover Brussels Sprouts – this is a weird one but can work!
  • If you don’t eat bread you can swap out the tortilla for lettuce wraps instead.

This is making me want to cook a goose! Something I’ve always wanted to do for the holidays but I think I’ll give it a shot with duck first as that’s something I do cook frequently. Really love all the fresh ingredients in these wraps.

What a lovely idea for leftover goose. My mum loves her goose and wouldn’t contemplate anything else. Leftovers always goes into some sort of stew though, so this would make a nice change.

Hope you have a Happy and Healthy Christmas.
