It couldn’t be easier, making coronation meringues is a great way to serve your street party guests a simple but delicious coronation dessert. All you have to do is melt the chocolate, whip the cream and assemble your Union Jack meringues.
The mix of white chocolate, thick whipped cream and fresh fruit is heavenly, fit for a king you might say. It’s light, fresh and perfect for that summer bank holiday(my fingers are crossed).

Meringue Nests
You can pick up these mini meringue nests at most supermarkets or your local baker if you’re feeling fancy. I picked up mine for Aldi and they are brilliant. The sides are strong enough to hold the copious amounts of melted chocolate I added to each portion and they are still light and slightly sweet.
Double Cream
Whipped to soft peaks, the double cream is a great addition to this King’s coronation pudding. You’ll want to mix the melted chocolate in once it’s cooled a little so it doesn’t melt the cream.
White Chocolate
I used a milky bar for this coronation pudding recipe but you can use any of your favourite white chocolate or even the cheap and cheerful supermarket’s own brand. Melt it in the microwave in short bursts, stirring throughout so it doesn’t burn or get stuck.
Fresh Fruit
In keeping with the coronation, I have used red and blue fruits in my meringue Easter nests. Strawberries and blueberries are my favourites so that’s what I used but you can use whichever you like, just chop your fruit into roughly even sized pieces and top your meringues with them.
How to make coronation pudding recipe– step by step

Start by melting your white chocolate in the microwave in short bursts, once it’s fully melted, allow it to cool slightly as your whip your double cream into soft peaks.
Gently mix your chocolate into your double cream and spoon into your meringue nests. (I suggest leaving yourself a spoonful to taste test because it’s so good!)
Add your fruits to the top of your coronation meringues, if you have the time, you can arrange your fruits into a little Union Jack.


Top Tips
- Allow your chocolate to cool slightly before mixing it slowly into your whipped cream. Otherwise, the cream may melt and lose some of its volume.
- Don’t forget to wash your fruits. A very boring but vital step!
- Decorate your Easter nest meringues in the shape of a Union Jack with fresh fruits, this turns our street party meringues into coronation meringues.

Coronation Meringue – Cheats Union Jack Meringues
Equipment
- microwave-safe bowl
- Spoon
Ingredients
- 8 (8) Meringue Nests (Store bought or homemade)
- 300 ml (300 ml) Double cream / heavy cream
- 1 tsp (1 tsp) Vanilla paste
- 60 g (2.12 oz) White chocolate
- 150 g (1. cups) Strawberries
- 100 g (0.75 cups) Blueberries
Instructions
Making the cream layer
- Melt the 60g white chocolate in the microwave for 20-second bursts until melted. Leave to cool slightly while you whip the cream.
- Using an electric whisk, beat the 300ml double cream (heavy cream) until it starts to thicken.
- Add the 1tsp vanilla and the melted chocolate to the cream and using a spoon mix it together.
Prepare the fruit
- Thinly slice the strawberries into batons for the Union Jack.
- Quarter the blueberries.
Assemble the Coronation Meringue Nests
- Place the cream mixture into the pipping bag and swirl the mix onto the meringue nests.
- Decorate with the strawberries as a cross and diagonals of the Union Jack.
- Fill in the gaps with the quarter slices of blueberries.
- If you don't want to do the Union Jack you can stud the cream with the berries and a sprig of mint. Perfect for the summer as a delicious dessert.
