Meringue Nests

You can pick up these mini meringue nests at most supermarkets or your local baker if you’re feeling fancy. I picked up mine for Aldi and they are brilliant. The sides are strong enough to hold the copious amounts of melted chocolate I added to each portion and they are still light and slightly sweet.

Double Cream

Whipped to soft peaks, the double cream is a great addition to this King’s coronation pudding. You’ll want to mix the melted chocolate in once it’s cooled a little so it doesn’t melt the cream.

White Chocolate

I used a milky bar for this coronation pudding recipe but you can use any of your favourite white chocolate or even the cheap and cheerful supermarket’s own brand. Melt it in the microwave in short bursts, stirring throughout so it doesn’t burn or get stuck.

Fresh Fruit

In keeping with the coronation, I have used red and blue fruits in my meringue Easter nests. Strawberries and blueberries are my favourites so that’s what I used but you can use whichever you like, just chop your fruit into roughly even sized pieces and top your meringues with them.

How to make coronation pudding recipe– step by step

For the full recipe and instructions scroll to the bottom of the page for the recipe card.

Start by melting your white chocolate in the microwave in short bursts, once it’s fully melted, allow it to cool slightly as your whip your double cream into soft peaks.

Gently mix your chocolate into your double cream and spoon into your meringue nests. (I suggest leaving yourself a spoonful to taste test because it’s so good!)

Add your fruits to the top of your coronation meringues, if you have the time, you can arrange your fruits into a little Union Jack.

Top Tips

  • Allow your chocolate to cool slightly before mixing it slowly into your whipped cream. Otherwise, the cream may melt and lose some of its volume.
  • Don’t forget to wash your fruits. A very boring but vital step!
  • Decorate your Easter nest meringues in the shape of a Union Jack with fresh fruits, this turns our street party meringues into coronation meringues.

FAQS

Are meringue nests the same as pavlova?

No, but they are very similar. Meringue nests are a cripsy-shelled meringue whereas a Pavlova dessert has a soft marshmallowy centre. They are both often decorated with fruit and served in the summer.

Can you buy ready made meringue?

Yes, you can easily buy ready made meringue from most supermarkets. They are usually in the bakery section but can move around to the seasonal aisle at this time of year. The can sometimes be found with the custards and tins of fruit.

Do meringue nests go out of date?

Meringues will go out of date about 2 weeks after they have been baked, so you’ll want to ensure your meringue nests are properly stored in an air-tight box somewhere cool.

Shop-bought meringues can last for months so please do check the packaging.

Can you add white chocolate to double cream?

You can add white chocolate to double cream but melting your white chocolate first and then allowing it to cool slightly. This will stop it from melting your double cream when you stir them together. As the chocolate sets it will harden slightly and thicken the cream.

What is an easy King’s coronation pudding?

An easy King’s coronation pudding is a coronation meringue nest filled with cream and fruit. It’s so easy to whip together and being able to buy the ready made meringues takes the prep time down to about 10 minutes.
