Caster Sugar

Caster sugar, also known as superfine sugar, is essential in blondie recipes for its fine texture, which dissolves more quickly than granulated sugar. This results in a smoother batter and a more even distribution of sweetness. Its fine grains also help achieve a slightly crisp top layer while keeping the interior moist and chewy, which is characteristic of a good blondie.

Brown Sugar

Brown sugar adds depth of flavour and moisture to blondies, thanks to its molasses content. It helps to create a rich, caramel-like taste and contributes to the chewiness of the blondies. The darker the brown sugar, the more pronounced the molasses flavour, enhancing the overall complexity of this simple treat.

Vanilla Flavouring/ Extract

Vanilla extract is a crucial flavour enhancer in blondie recipes, providing a warm, sweet aroma that complements the caramel notes from the brown sugar. It enriches the overall flavour profile, making the blondies more aromatic and delicious. A good quality vanilla extract can make a noticeable difference in the final taste of your blondies.

Unsalted Butter

Butter is fundamental in blondie recipes, providing richness and a tender crumb. It adds a luxurious mouthfeel and helps to bind the ingredients together. Using melted butter can give blondies a denser texture, while creamed butter can make them lighter. The choice of salted or unsalted butter can also subtly influence the flavour.

Whipped Double Cream

Get to whipping and serve your warmed blondies with some whipped double cream. It’s thick, a little sweet and the perfect pairing to this bake. You can even add sprinkles or berries to this for a full dessert.

Chocolate Sauce

Buy any chocolate sauce and drizzle it back and forth across the top of the blondie. It’s sweet in all the best ways and can take these to the next level.

Hot Fruit – Mixed Berries

Try slowly cooking some mixed berries in a saucepan with a little sugar until they have softened down and warmed. Pour them over your Blondies and enjoy!

Storing Basic Blondie Recipe / Making ahead of time options

Storing leftovers

Blondies are really to easy to store and you only need an air tight box and somewhere cool. If you can keep them out of sunslight as they might sweat in the box. Blondies last about 3 days – if you haven’t eaten them all by then.

Freezing

Freezing blondies is a great way to keep them fresh and enjoy them later. Here’s how you can do it:

Cool Completely: Allow the blondies to cool completely at room temperature. This prevents condensation from forming when you freeze them, which can make them soggy.

Cut into Bars: Once cooled, cut the blondies into bars of your desired size. This makes it easier to grab a single serving later on.

Wrap Individually: Wrap each blondie bar tightly in plastic wrap or aluminum foil. This helps prevent freezer burn and keeps the bars fresh.

Use Parchment Paper: If you’re stacking the bars, place a layer of parchment paper between each layer to prevent them from sticking together.

Airtight Container: Place the wrapped blondies in an airtight, freezer-safe container or a heavy-duty freezer bag. Remove as much air as possible.

Label and Date: Label the container or bag with the date so you know how long they’ve been stored. Blondies can be frozen for up to 3 months.

Thawing: When ready to eat, thaw the blondies in the refrigerator overnight or at room temperature for a few hours. They can also be microwaved for a few seconds if you’re in a hurry.

Reheating

To reheat blondies once cooled, microwave them for about 10-15 seconds or warm them in a preheated oven/air fryer at 350°F (175°C) for 5-10 minutes to restore their soft, chewy texture.

Some of my favorite recipes to share are the ones I make at home too! I lean towards making more brownies because that’s what everyone in my family likes, but I’m more of a blondie girl myself. I think I’m going to switch it up and try these soon!
