These easy funfetti blondies are the perfect treat to satisfy your sweet tooth. They’re simple to make and burst with flavour. But what makes them even more special is the funfetti sprinkles. These colourful little bits add a pop of colour and bring a delightful crunch to each bite.

But the fun doesn’t stop with just the sprinkles IN the blondies – I’ve also added extra sprinkles on top to create a crunchy, sugary crust. It’s the perfect balance of chewy and crunchy, sweet and colourful.

Funfetti bars are the perfect summer picnic food, they are light and colourful and everyone who eats one cannot help but smile. They travel well in a Tupperware container and can be eaten warm or cold.

Funfetti

The main ingredient to these blondies is of course the funfetti sprinkles, they add something special to the classic blondie recipe. Funfetti is a type of sprinkle usually made up of tiny sugar beads in various colours. The name comes from the combination of “fun” and “confetti,” and it’s no surprise why! The little sprinkles add a touch of joy and whimsy to any dessert and they are perfect in these rainbow blondies.

These funfetti sprinkles not only add a burst of colour and flavour but also add to the overall texture of the blondies. The crunchy texture of the sprinkles pairs perfectly with the chewy, soft texture of the blondies.

How to make – step by step

Start by gently melting the butter in a microwave-safe bowl. You’ll want to melt it in 10-second bursts in the microwave so it doesn’t burn.

Add the brown sugar and the caster sugar to a bowl. There’s no need to sieve your sugars.

Add the melted butter to the sugar and mix together until combined.

Add the vanilla extract and stir in.

Sieve in the flour, baking powder and salt and mix well. If you used salted butter, you can omit the salt from this step.

Now time to add your funfetti sprinkles to the batter, I think the more the merrier but you can choose the level of fun your rainbow blondies are.

Once these have been gently mixed in, pour your batter into a lined tray bake tin and add a large handful of sprinkles to the top of your birthday cake blondies and bake them until the edges are golden brown and the centre is still soft and chewy.

Top Tips

When it comes to working with sprinkles, there are a few things to keep in mind to ensure your blondies turn out perfectly. Firstly, avoid over-mixing the sprinkles in the batter as this can cause them to bleed and lose their vibrant colours. It’s best to gently fold them in towards the end of the mixing process.

Another tip is to lightly press the sprinkles onto the top of the blondie batter before baking. This will help them adhere to the surface and prevent them from falling off after baking.

Blondies are at their most delicious when they are still a little gooey and chewy in my opinion. So I suggest you take them out of the oven a little before they are fully done, you’ll see the edges of your birthday blondies go golden brown and the centre will still be a little gooey. Don’t worry they will be fully cooked.

If you prefer chewier blondies then I suggest keeping them in the oven for a couple more minutes.

Luckily, there are endless possibilities for serving these funfetti blondies. If you’re feeling simple, you can cut them into squares and serve them on a platter. Or, elevate them by adding a dollop of whipped cream or a scoop of vanilla ice cream on top!

Ingredients
 

  • 175 grams (6 ⅙ oz) unsalted butter
  • 200 grams (7 oz) light brown soft sugar
  • 150 grams (5 2/7 oz) caster sugar
  • 3 medium (3 medium) eggs
  • 2 teaspoons (2 teaspoons) vanilla extract
  • 250 grams (2 cups) plain flour / all purpose flour
  • 1 teaspoon (1 teaspoon) baking powder
  • small pinch (small pinch) salt
  • 150 g chocolate chips
  • 200 g (1) sprinkles

Instructions
 

  • Preheat the oven to 180ºC / 350°F / Gas Mark 4.
  • Line a 9 inch x 12 inch cake pan (traybake tin/cake tin) with greaseproof paper.
  • Gently melt the butter in 10 second bursts in the microwave.
  • Add the brown sugar and the caster sugar to a bowl.
  • Add the butter to the sugar.
  • Mix together until combined.
  • Stir in the three eggs. (Photographed before I added the third in)
  • Mix together until the eggs are combined.
  • Add the vanilla extract and stir in.
  • Sieve in the flour, baking powder and salt and mix well.
  • Stir in the chocolate chips.
  • Add the blondie mixture to the prepared cake pan and level it off. Sprinkle over the sprinkles and gently press into the dough.
  • Bake for 30 minutes and until the top feels set to the touch and is light brown colour.
  • Allow the blondie to cool in the cake tin until easy to handle and remove from the tin, place on a cooling rack and slice into bitesize pieces or bars.

Notes

•Store your blondies in an airtight container. They should last for up to 5 days if you don’t eat them all first.
•Blondies freeze really well. Once they are cooked wrap them up in cling film or pop in an airtight container and store them for up to 3 months. Leave them at room temperature to defrost when you’re ready to enjoy them. You can also pop them into a medium warm oven to warm them up.
•What else can I add to the blondies? Well there are so many things you can mix into them. I would suggest your favourite chocolate chips, dried fruits, nuts or even your favourite candy bar.
