I’m not sure we could oven-cook sausages without this vital ingredient, I love pork sausages from a local farm shop. They have a fuller flavour and contain fewer unnecessary ingredients.
You can use any of your favourite sausages, chipolata sausages or even meat-free! Just be sure to check to adjust the cooking time depending on size. It would need longer for larger sausages or less time for smaller sausages like chipolatas.

- Be sure to preheat your oven, it will make cooking quicker and ensure your sausages cook evenly.
- Pierce a tiny hole in the skin of your uncooked sausages so fat can escape and stop your oven-cooked sausages from splitting.
- Use a food thermometer to check your sausages are fully cooked all the way through, there should be no pink bits and your thermometer should read 75 degrees celsuis. If you don’t have a food thermometer and are worried about the sausages not being cooked then slice them sausages open and check the centre.

The classic winter BBQ wouldn’t be complete without rain! If the rain does ruin your BBQ then have an indoor hot dog by cooking your sausages in the oven and toasting your bun in a toaster. Add your favourite topping and you’ve got yourself and English BBQ.
YORKSHIRE PUDDINGS – TOAD IN THE HOLE

Substitutions and variations
As this recipe is nearly entirely made up of sausages the only variations I can recommend are different types of sausages. I love Cumberland sausages, but Lincolnshire sausages, plain pork, pork and apple… plus a million and one other combinations.
The cooking time for this recipe is for normal size sausages. If they are a little larger – for example, I find butcher sausages tend to be a bit larger so I would recommend adding 5 minutes to the cooking time. For chipolatas, I would recommend cooking them in the oven for 15-20 minutes. No matter the size make sure you turn them over halfway through cooking.
Storing oven cooked sausages / Making ahead of time options
Sausages can be kept for about 3 days in an airtight container in the fridge. But you could also freeze your sausages, once oven-cooked allow them to fully cool and then freeze for up to a month.
You can cook sausages prior to needing them, just keep them in the fridge. They are best fresh though.

- 6 pork sausages
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 190°C/ 375°F/ Gas Mark 5.
- Put the oil and then the sausages on a baking tray.
- Optional – Using a knife to carefully cut a small hole into each sausage's skin to help any fat escape when cooking. Too many holes can cause the sausages to dry out when cooking.

This is such a useful recipe post. Cooking sausages in the oven doesn’t immediately spring to mind but it is so much easier, no standing over the hob watching them to stop them burning.
