Amber Marshall Magazine has featured my recipe in her first magazine! The Heartland star’s magazine features my cinnamon courage cookies.
I was incredibly lucky to be featured in Amber Marshall’s first issue of her Life and Style Magazine in Canada.
As some of you know I absolutely love horses and one day I hope to have my own. I also love Canada after I went there a few years ago and fell in love with the people and place.
I sent Amber a horse mould as a thank you for the courage her TV show in Canada ‘Heartland’ gave me to try equine assisted therapy for my anxiety. The TV show showed me how much I love horses, how wonderful they are and the therapy helped me get out and changed my life. Horses are incredible animals. I couldn’t describe what happened as it is so hard to explain, but it was incredible and since then I have become such a happier and far more outgoing person.

These cookies are really yummy, especially dipped in tea. I love cinnamon cookies!
You can always use this recipe with cookie cutters. Roll out the dough to about 5mm thick and use a cookie cutter or plunger cutters to make biscuits. To stop the shapes spreading in the oven put the baking trays of cookies in the fridge for half an hour and then put them in the oven.

As well as featuring my story I had my first ever recipe published! Cinnamon horse shaped cookies- they added the courage! These cookies are for humans not horses!
