Cranberry Galette
Equipment
- Butter knife
Ingredients
Shortcrust Pastry Ingredients
- 1 sheet shortcrust pastry ready-made or
- 175 g plain flour
- tiny pinch salt
- 90 g unsalted butter
- 2 tbsp cold water
Cranberry Galette filling
- 200 g cranberries (fresh or frozen)
- 1 teaspoon ground cinnamon (optional)
- 5 tablespoons granulated sugar
- 1 egg (for glazing)
Instructions
Shortcrust Pastry
- Place the 175g plain flour and pinch of salt into a mixing bowl and add the 90g of butter cut into cubes.
- Rub the flour and butter together with your fingers to make what looks like bread crumbs.
- Using a normal knife stir in the 2 tablespoons water little by little until the dough as come together.
- Wrap the dough in cling film and place in the fridge for at least 30 minutes.
Making the cranberry galette
- Preheat the oven to 200ºC fan / 400ºF.
- With the pastry at room temperature, roll out and place on a baking tray.
- Mix together the sugar and the cinnamon.
- Place the fresh or frozen 200g cranberries on the centre of the pastry leaving a border.
- Sprinkle the sugar and cinnamon mix over. This is a tart dessert so if you want it sweeter add more sugar.
- Fold the pastry border in the centre to make a case.
- Lightly beat the 1 egg with the 1 tablespoon of milk and brush the pastry case, sprinkle with a little granulated sugar.
- Bake for 25-30 minutes – until golden brown. After the first 10 minutes reduce temperature to 180ºC. (or cover with aluminum foil)
- Serve and enjoy hot. Best served hot with vanilla ice cream.
