These super easy breakfast waffles are brilliant to make using a waffle iron at home. I love enjoying these with friends and family on weekends. We make a beautiful sharing platter of them with fresh fruit, cream and even ice cream and bacon when are feeling super fancy.
It is my most humble opinion there isn’t anything better than waffles!
They can be served as a part of a savoury or sweet dish and be enjoyed any time of the day! I love them with bacon and maple syrup at the moment but fresh fruit is always a classic way to serve them.

What do you put on waffles for breakfast?
There are so many delicious things you can put on your waffles. If you want to make them super healthy granola and yoghurt is a great choice along with fresh fruit. If you want to make them be more sweet then my top picks are ice cream, chocolate spread (with banana is amazing) and cream. For savoury my suggestions would be waffles bacon, sausages and even eggs are gorgeous too. Maple syrup and a range of nuts and seeds are really good too.
How do you make waffles from scratch?
Making waffles from scratch are super easy. In a large bowl mix the ingredients with a whisk until light and bubbly. Then pour over a spoonful at a time in to the waffle iron. Cook per the instructions on your waffle maker.
What can I put on my waffles instead of syrup?
If you are looking to replace syrup on your waffles, honey is a good alternative. If you want to reduce the sugar on your waffles you can try having fresh fruit with nuts and seeds. It helps make the finished waffles a little healthier.
Is pancake and waffle mix the same?
Waffle mix and pancake mix are similar but a little different. For waffles you want the mix to rise to fill the waffle iron. For pancakes you can have them very differently with the thin type of pancake or the American chunky pancakes.
What sides go with waffles?
When we have done large family breakfasts we have we have waffles stacked up and ready to dive in to. On the side we have scrambled eggs, bacon, sausages, plates of fresh fruit, yoghurt, cream and some nuts and seeds too with some granola for a little crunch.
This recipe is a simple starting place for tasty waffles. I love the subtle lemon and vanilla flavours in the base. It works so well with a range of toppings.

Easy Breakfast Waffles
Ingredients
- 250 g plain flour / all purpose flour
- 2 tsp baking powder
- 2 tbsp caster sugar
- Pinch of salt
- 2 large eggs
- The zest of 1 lemon
- Juice from half a lemon
- 440 ml semi skimmed milk
- 2 tablespoons sunflower oil
- 1 teaspoon vanilla extract
Instructions
- Sieve the flour into a large mixing bowl.
- Add the baking powder, salt and sugar, and mix.
- Zest the lemon and add it to the mix along with the juice of half the lemon.
- Add the eggs and oil. Pour in the milk and whisk until smooth.
- Cook as per instructions on your waffle maker.
- My favourite toppings are fresh fruit, bacon, yoghurt, maple syrup and even ice cream with extra sprinkles!
