- Place the saucepan on a low heat and allow the strawberries to break down, the lemon to mix and sugar to dissolve. Miz with a wooden spoon to distribute the flavours evenly.
- After 5 minutes the mix should be juicy and still have some chunky pieces of strawberry in. It is now ready. You can keep it cooking to make it thicker if you want.

- I use half a lemon for this recipe. Half the zest and then half the juice. It is much easier to zest the lemon before cutting it in half.
- Easily turn this compote recipe into the coulis recipe by putting the finished compote into a blender to make it smooth.
