MANGO

I love sweet and soft mango. The summer is the perfect time for an easy mango salad, the sharp lime dressing pairs perfectly with the juicy sweet fruit.

AVOCADO

Avocado is good for so much more than just guacamole or smashed and smeared on toast. You can use it in a salad like this. Simply slice and mix it with mango and serve. The simple creamy avocado goes so well with the chopped chilli too.

LIME

Sharp and fresh, the perfect dressing for a mango avocado. A squeeze of lime is a great addition to any fresh summer salad. It also helps stop the avocado from turning brown. Keeping the salad more photogenic!

CORIANDER

Leafy and delicious, coriander is one of my favourite herbs, it has a full flavour and works really well with the sweet mango and the spice of chilli. Parsley also works as a herb for this salad.

Mango Avocado Salad Top Tips

Make sure your avocado is ripe by giving it a little squeeze before you chop it up. Check for any mould too. Avocado fans know how temperamental avocados can be!

Be sure to wash your hands after chopping your chillis and most importantly, don’t touch your eyes! They will burn and it will be very uncomfortable.

Don’t forget to wash your coriander, I grew mine in the back garden so needed to give it a full shower in order to make it safe to eat,

Serving Suggestions

This easy mango salad can be served as it is. It’s so sweet and tasty that it needs no introduction. It does work well as a side salad to your tasty BBQ or mixed with cooked and cooled rice to make a mango rice salad, I always add a blob of low-fat mayo to my rice salad, it blends all the flavours together.

Thai mango salad with roasted peanuts

You can turn this easy salad into something a little more special by turning it into a Thai mango salad with roasted peanuts.

I already add chilli to the recipe to add some fire but try adding roasted peanuts to the top as you serve. It adds some crunch to the finished salad and it makes it even tastier.

Red onion Mango Salad

Add a few thin slices of red onion to the mix to add a crisp spice to the salad. Red onions are perfect raw on a salad, they’re a little peppery and wonderfully crispy.

Storing / Making ahead of time options

This easy mango avocado salad is best served as fresh as possible. Avocados brown very quickly so it’s best to chop and serve your avocado mango salad straight away.

The salad can be stored in an air-tight container in the fridge overnight. Make sure you add a healthy lime squeeze, this will help the avocado from browning.
