How to make Watermelon Feta Mint Salad – step by step

To make this simple salad you will need to wash and prepare your ingredients, so chop your cucumber into slices or chunks, cube your watermelon (don’t forget to cut off the rind) and puck and wash your mint leaves.
Chop your feta into cubes and then arrange ll your ingredients into a serving bowl. Sprinkling the mint leaves on last.
To finish, mix your balsamic vinegar with any leftover watermelon juices and pour over the watermelon feta salad with balsamic. Add a pinch of salt to taste.

Watermelon Feta Mint Salad
Equipment
- serving bowl
Ingredients
- half cucumber
- 500 g watermelon
- 200 g feta cheese
- 10 g fresh mint (about one handful)
Vinaigrette
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- small pinch salt
- 1 tbsp lemon juice
Instructions
- Chop up the half cucumber into chunks. Keep the skins on or remove them to your preference. Add them to serving a bowl.
- Remove the 500g watermelon from the fridge, rind and chop the flesh into bite-size chunks. Add the pieces to the cucumber.
- Remove the 200g feta cheese from the packet and chop it into chunks. Add to the serving dish.
- Mix the cucumber, feta and watermelon together with the mint leaves.
- Mix the 2 tbsp balsamic vinegar, 2 tbsp olive oil, a pinch of salt, and 1 tbsp lemon juice in a jam jar or jug.
- Drizzle the vinaigrette over the salad and serve.
