The Mozzarella and Chilli Pesto Pasta is a super easy meal to make and it is perfect for all sorts of lunches and dinners. Plus great for lunch boxes.
I love an easy dish and this is definitely one of the easiest I have in my every day weekly choice. It’s quick to make, nearly everyone loves it. If you don’t like chilli then don’t include it or use sweet peppers instead. Both work really well.
Mozzarella and Chilli Pesto Pasta perfect lunch and dinner
Mozzarella and chilli with pesto are a combo I love. The earthy pesto with the creamy mozzarella and of course chilli for a rich hint of flavour combing them all.
Lunch box pasta idea
This is a great choice for a lunch box pasta. It’s easy to make and stores in the fridge really well too. I have made this before for 3 days at work. Each day I added a little something extra to it like falafel one day, leftover roast chicken the next and maybe some fresh peaches or something sweet on the last day. Cured meat like salami or chorizo is also a lovely addition.
How to make this pasta
Cook the pasta per the instructions. While it’s cooking chop up the tomatoes the mozzarella and some fresh herbs like basil or parsley. Plus some red onion nice and thin for a little crunch amongst the soft pasta. Once the pasta is cooked add it to a bowl and mix it all together. Add the olive oil and give it another stir.
Lemon and oil pasta dressing
If you would like to give it a more tart taste add some lemon juice to the oil to taste and drizzle it over. I love a little lemon. It can also help the chilli flavour really sing out.
Mozzarella and Chilli Pesto Pasta
Ingredients
- 250g dried pasta
- 3 tablespoons of pesto red and green work well
- 2 tablespoons of olive oil
- 120g mozzarella pearl balls or shredded mozzarella ball.
- 200g cherry tomatoes
- red onion
- small bunch of parsley
- chilli to taste
- salt and pepper
Instructions
- Cook the pasta as to the instructions on the pack.
- Chop the tomatoes, onion, parsley and chilli.
- Once cooked, drain the pasta and add the pesto, oil and all the ingredients and stir in well.
- Set aside to cool if you want it for lunch boxes.
