Lemon Lychee Martini

Enjoy a sip on a Lemon Lychee Martini. A mix of limoncello, sweet lychee juice mixed with vodka and topped up with the double lemon mixer from Double Dutch.
I love lychees! They are a strange and fairly unknown fruit to most people, some people saying they look like eye balls. However they are delicious. They are so squidgy and super sweet but in a fresh natural way. They are so versatile too. As well as being good on their own and in curries (major yum when it’s with a spicy hot sauce) but also in drinks and cocktails.


This drink is so refreshing and perfect to enjoy in the summer sunshine. I love the lychee and lemon flavours combined. It also has a great taste which isn’t too strong of alcohol so be warned the tipsy feeling will sneak up on you!

Double Dutch
To make this cocktail I used the double lemon premium mixer from the increibdle company Double Dutch. Double Dutch was founded by Dutch twins Raissa and Joyce de Haas. Their love of flavour of creating delicious mixers have lead to a brilliant range that doesn’t even really need alcohol to enjoy with it. Find out more about their drinks here.
There are some great flavours in their collection as well as the traditional tonics, ginger beers and soda water. I would definitely recommend the cucumber and watermelon mixer and cranberry and ginger mixer. The latter which will definitely be used for Christmas cocktails I’m sure.

Lemon Lychee Martini
Ingredients
- 12.5 ml limoncello
- 50 ml lychee juice
- 25 ml vodka
- Double Dutch double lemon mixer or regular lemonade
Instructions
- Add a few ice cubes to the martini glass to cool it.
- Empty the ice from the glass and add the limoncello, lychee juice and vodka to the glass.
- Top up with Double Dutch double lemon mixer or regular lemonade (old fashioned lemonade works really well too).
- Add a lychee or two to a cocktail stick and balance on the glass and serve.

I love the sound of this. I adore lychee and have enjoyed some lovely lychee cocktails but not combined with limoncello!

Lemoncello is my favourite! I want to know how they will taste with lychees although I haven’t had them before.

I’m so hot right now, lemon anything sounds marvellous. But what a delicious looking cocktail. I haven’t had a lychee in a very long time and never in a cocktail.
