Pimm’s Salad

If you love the taste of Pimm’s you are in the right place. Summer is only complete with a glass of Pimm’s full of the essential fruit and herbs to enjoy in the sunshine. This year I have turned the iconic drink into a fresh and fruity Pimm’s salad. I have used the essential Pimm’s ingredients for the salad and use a measure of Pimm’s itself for the dressing.

This beautifull summer salad with Pimm’s dressing will soon be a family favourite in your house as it is in mine for family events, summer BBQs, picnics and even a midweek special when we want a super salad.

I love this salad each summer. It’s so quick to make – usually 5 minute max. It’s usually whipped up at the same time as a jug of Pimm’s. There for saving time on the chopping and kitchen time. Pimm’s definitely knows it flavours and this salad is just so fresh, fruity and earthy too.

The orange slices are definitely a love or hate part of the salad but for me I love them. The little bit of citrus really works well with the other ingredients. To save time I usually leave the skins on so they’re easy to pick up and nibble on.

What is in a Pimm’s Salad?

A Pimm’s salad is hugely adjustable but this is my go to version. Sometimes the type of lettuce is different or I leave out the oranges if I forget them but overall it’s the same.

You only need 5 ingredients for the salad part. It makes it easy to assemble very fast!

  • mixed leaf salad
  • strawberries
  • orange
  • cucumber
  • fresh mint

How do I make a Pimm’s dressing?

If you have a jam jar to hand it’s the best way to mix up the dressing so quickly. Pop all the ingredients into a the jar and give it a good shake. Plus if you have any left over you can put the lid back on and pop it in the fridge to enjoy later.

Summer picnic salad ideas

This easy to make 5 minute Pimm’s salad is just one of so many quick salads which are perfect for enjoying at picnics or in the garden at home. I for one don’t want to spend all my time on making salads for event however I still want them to be beautiful and taste delicious.

Quick fruity salad ideas you can also try are;

  • Cucumber, watermelon and feta. A lovely mix of flavours and super fresh too. The watermelon adds a fruity juiciness to the salad.
  • Parma ham, peach and mozzarella salad. A lovely juicy and creamy salad. The Parma Ham adds a slightly saltiness to the salad too.
  • Raspberry, rainbow chard, mint and a honey/oil dressing.

Ingredients
 

For the salad

  • 100 g mixed leaf salad
  • 100 g strawberries
  • ¼ orange
  • half cucumber
  • 30 g fresh mint

For the Pimm's Salad Dressing

  • 1 tablespoon Pimm's
  • 2 tablespoon olive oil
  • 0.5 teaspoon honey
  • 1 teaspoon white wine vinegar
  • very small pinch salt

Instructions
 

  • Lay the mixed leaf salad on a serving plate.
  • Chop the strawberries, cucumber and orange. Lay them on top.
  • Sprinkle the mint leaves on top.

To make the Pimm's dressing

  • Either in a jar with a lid or jug add all the dressing ingredients and give it a stir or shake.
  • Taste and adjust to taste.
  • Drizzle over the salad when you're ready to serve or leave it on the table for people to add it themselves.
