This is a delicious and easy dinner to make. It is brilliant after work as it’s so simple to do after a long day. Pop it all in a oven proof dish and pop in the oven. If you don’t want carbs serve it with a big salad.

What I love is how simple this dish is. It also goes with so many other things. We have made these for BBQs, parties and pot luck dinners. They go great with big salads, in creamy pastas like this creme fraiche delicious recipe. If you are wanting to do this on a BBQ then you can leave this to marinade for a while in the fridge and then cook on the BBQ how you like best. When I cook this I tend to keep it on a tray so it keeps it together and then easier to serve.

I used a Sauvignon Blanc in the dinner and had a glass of when it was served. I especially enjoying a little of the wine while I’m preparing it all.
Baked chicken thighs
What I love about these is they are a quick to make. Baked chicken thighs are a lovely easy thing to make and can be made with so many flavours. I love this simple lemon version but you can also try lemon and honey, pesto and sun-dried tomato or even soy sauce and sweet chilli sauce.
Oven Roasted chicken thighs
Oven roasted chicken thighs is an easy to cook chicken thighs. They tend to go really succulent especially when you cook it with the skin on. To stop them sticking to the bottom of the tray you can add a few slices of onion or celery. It helps keep them raised and also helps make a great gravy if you want a gravy. The fats will drip out and the vegetables can help build up a stock.
Tasty lemon chicken
Lemon as a flavour works so well with chicken. Chicken is a great meat that is subtle enough to absorb flavours it is cooked with. It makes it a super versatile ingredient. To make tasty lemon chicken you can do as the recipe says and look it with of lemons. You can cut up lemons and mix it with garlic (include the zest) and add some under each chicken skin. As they cook the lemon taste will absorb through.

There are so many chicken thigh recipes available and what is great is that they don’t have to be complicated. This is a simple 8 ingredient recipe but you can simplify it even more if you remove the wine. I do love cooking chicken thighs with a hint of flavour like lemon or honey. It makes them smell amazing and taste pretty delicious too.
Chicken thighs with lemon
Ingredients
- 6 chicken thighs
- 2 lemons
- 250ml of Sauvignon Blanc
- a few sprigs of fresh thyme
- 4 thickly chopped garlics
- 3 tablespoons of olive oil
- 1 chicken stock cube
- 200ml water
Instructions
- Preheat the oven to 180ºC/160º fan.
- Place the chicken in the roasting tin.
- Squeeze the lemon juice oven the chicken and add the left over lemon halves to the tin.
- Chop and add the garlic and fresh thyme.
- Dissolve the chicken stock in the water and pour it over the chicken.
- Add the wine and season with a little salt and pepper.
- Roast for 45minutes, giving the mix a shake half way through.
- Serve with couscous or potatoes and salad. I serve with this baby potatoes roasted along side the chicken. Use the left over juice as a delicious gravy.
