Dried chickpeas are really easy to prepare for eating. Simply drain, rinse and pop in a saucepan with double the volume of water to chickpeas. It couldn’t be easier t cook and enjoy spicy chickpea stew.

Personally, I love the warm smooth flavour that cumin has in thisChickpea stuffed baked potato. I recently bought cumin seeds that you grind yourself in a pestle and mortar. It releases the aroma and the flavour is so much fuller! But you can use ground cumin too, it’s just as delicious.

How to make Spicy Chickpea Stew – step by step
In a pan, soften the red onion and garlic on a low heat with a little olive oil.
Stir in the cumin seeds. For some extra heat, also pop in your chilli here.
Add in the chickpeas and tin of tomatoes and stir.
Mix in the salt and pepper.
When the baked potatoes are nearly done, add the cherry tomatoes to the mix. This will allow them to keep their shape but warm up.
Carefully half the potatoes and spoon the spiced tomato chickpea mix on top.
Garnish with a few slices of red onion and fresh coriander.
Serve and enjoy.
To switch up the recipe, try swapping the Chickpea stuffed baked potato for a sweet potato.

- 2 baking potatoes cook your preferred way
- 1 red onion save a little for garnishing
- 2 cloves of garlic
- 1 tablespoon of cumin seeds
