EASTER EGGS
I am partial to a Cadbury’s Mini Egg Easter Egg or something more luxurious like Thornton’s salted caramel Egg but in my house, all chocolate is good chocolate and when it’s egg-shaped, well even better.
For this recipe you need two types of Easter eggs. A large hollow egg for the cheesecake mix and some smaller ones for the decorations.
Its very easy to split your Easter egg in half for the Easter Egg Cheesecake – simply warm up a knife in some hot water and run the warm knife around the seam of the egg. You will need to dip the knife back in to the hot water a few times. Take your time and you will manage it. This way you can cut the Easter egg in half without cracking it!
CREAM CHEESE
Usually, I am not one to boast about using branded items for my recipes, you have to work with your favourites at your price point. However, my only recommendation is to use Philadelphia Cream Cheese. It has the best and fullest flavour for a no bake cheesecake.
I have tried supermarket own brands and never had the same results. I would also suggest not using low fat cream cheese. If you do want to help keep the fat content down, then I would eat a smaller portion of this yummy Chocolate Easter Dessert.
DOUBLE CREAM
Double cream / heavy cream is needed for no bake cheesecake recipes. As you whip it up the cream goes stiff and this helps the cream cheese layer set and hold it’s shape.Cheesecake filled Easter eggs will hold the cream cheese mixture in really well so you don’t have to worry about the set as much as you do with a normal cheesecake.

How to makechocolate Easter cheesecake – step by step

Start by cutting your Easter Egg in half using the warm knife trick. Scroll down to the FAQs for an in depth guide.
Making the Basefor the cheesecake filled Easter eggs
Melt the butter gently in the microwave in short bursts (in a microwavable bowl) or in a saucepan on a low heat.

Crush the short bread biscuits in a food processor, or put it in a plastic sandwich bag and use a rolling pin to break them up (my preferred method to leave them as larger crumbs).

Put the biscuit crumbs in a bowl and add the melted butter. Stir until all the biscuits are coated in the butter.

Place the chocolate egg shells on to a plate or baking tray that fits in the fridge. I used a kitchen towel to hold them in place.

Divide the crumbs equally between the Easter egg shells and gently push the biscuit mix so they compact into the bottom. Place them in the fridge for the crumb layer to set.
Cream Cheese Layer of the Easter Egg Cheesecake

In a bowl cream together the cream cheese and caster sugar until the sugar has dissolved and is well distributed. You can add more or less sugar depending on your taste.

Stir in the vanilla extract.

In a new bowl whip the double cream until thick. Use a whisk or hand mixer to speed things up.
Stir in the double cream and cream cheese mixture together. Stop when combined so you don’t over mix.

Remove the egg shells from the fridge and spoon the cream cheese mixture in.

Level off the cream cheese and put it back into the fridge to set for at least an hour. Longer is fine if you want to make it ahead of time for an event.

Finally… DECORATE! You can decorate your no-bake Easter Egg Cheesecake any way you want! I choose to melt some milk chocolate and drizzle it over the pre-set cheesecake but you could add your own favourite Easter chocolates.

Top Tips
Make sure you really whip the double cream until thick. This will help the finished no-bake Easter egg cheesecake set properly.
Full-fat cream cheese can help thechocolate Easter cheesecake set better. Also, drain off any excess liquid in the cream cheese otherwise your cheesecake mix might go a little runny.
In order to split your Easter Egg in half without cracking the sides. Warm up a thin, sharp knife in a bowl of hot water and gently slide it around the egg seam to soften the chocolate. Adding a little pressure each time, the Chocolate egg should split open beautifully!
Don’t worry if it cracks, you can make the Easter egg cheesecake in a tin and decorate it with the broken pieces!

Serving Suggestions
Simply Serve
Cheesecake is perfect as it is, I would simply remove the Easter Egg Cheesecake from the fridge about 5-10 minutes before serving to decorate it.
Serve with fresh fruit
A lovely addition to this Easter cheesecake is to serve it with fresh berries. I love adding strawberries to mine, slicing them and laying them on the cheesecake top.
Surprise Cheesecake in an Easter egg
If you really want to wow your guests you could layer the other empty Easter egg half on top of your Easter egg cheesecake.
To form a whole egg; make a hot chocolate sauce (or just melt some chocolate) and then when it comes to serving, pour the hot sauce over the shell. It will melt away and reveal your Easter no-bake cheesecake underneath. Delicious and is always a hit in my house.

Substitutions and variations for a Easter Egg Cheesecake
BROKEN EASTER EGG SHELL!
If you accidentally break your Easter egg cheesecake shell, don’t worry. You can make this no-bake Easter cheesecake in a 6″ cake tin. I recommend using one with spring-away sides for easy removal.
Then use your leftover Easter chocolate to decorate thecheesecake-filled Easter eggs. If you do change it to 6 inch cake tin make sure to double the amount of ingredients for the shortbread and butter base in the recipe below.
If you have lots of Easter chocolate, try one of my other Easter recipes or my Leftover Easter Chocolate Traybake for the full chocolate experience.
VEGAN/ DAIRY FREE EASTER CHEESECAKE
This is such a simple recipe you could substitute out the non- vegan ingredients for dairy free alternatives.
For the Easter Egg shell you could use a NOMO Easter egg like this salted caramel one, or a MOO FREE option. Then use a plant based cream cheese and cream and you are good to go. I would love to see how this works as a dairy free cheesecake so please let me know in the comments below!
