Easter means all things Mini Eggs and of course, that includes these easy Mini Egg Rice Krispie Treats. A mix of chocolate, marshmallow, rice krispies, more chocolate and of course lots of mini eggs. These are so easy to make and a perfect Easter treat and party food. Easter rice krispie squares also make a great edible Easter present to share with friends and family. The more Mini Eggs the merrier.

With Easter just around the corner, supermarkets are filled with Cadbury’s Mini Eggs and so of course this year I just had to make a chocolate rice crispy treat traybake. You can decorate thesemini egg rice krispie treats with sprinkles, fruit or more mini eggs! Scroll down to find the super simple recipe.

These Easter rice krispie squares are a perfect no-bake way to entertain friends and family this Easter. They are so full of chocolate but the marshmallow helps to keep them soft enough to bite in too.

The most important ingredient of all is the mini eggs! I crushed mine by letting a little air out the bag and then hitting them with a rolling pin, This ensures they break unevenly and allow for big chunks and slithers.

You can even put some on top of the Easter rice crispy treats. I love adding sprinkles too!

How to makemini egg rice krispie treats – step by step

  • Line a 9 x 9-inch cake tin with greaseproof paper and make space in the fridge. I promise, that’s the hardest part of the recipe. My fridge is always full.
  • In a large saucepan place the unsalted butter, marshmallows and milk chocolate.
  • Place on a low heat and allow the butter, marshmallows and chocolate to melt and keep stirring to combine.
  • Using a rolling pin bash the bag of mini eggs to break them up a bit. Pour them into the melted chocolate mixture along with the Rice Krispies.
  • Pour the mix into the prepared tin and gently push it into a flat slab. Put to the side while you make the topping.
  • Gently melt the milk chocolate in short bursts in the microwave.
  • Pour the melted chocolate over the Rick Krispies in the cake tin and level off.
  • Sprinkle over the remaining Mini Eggs. Plus any sprinkles if you fancy it! Place in the fridge for 1 hour. Then remove from the tin and slice up.
  • Serve theeaster rice krispie treats treats and enjoy.

  • Add all your leftover Easter chocolate to theeaster rice krispie treats recipe, it will add for more flavour and it’s a great way to use up your leftovers! If you have any that is.
  • Lining your cake tin will make removing the mini egg rice krispie treats much easier. I use greaseproof paper, cut a shape into the bottom and then line the sides as well.

These mini egg rice krispie treats can easily be made ahead of time and stored in a cool dry cupboard for about 4 days. This also works if you have any leftover.

Please them in an airtight container for a couple days.

Equipment

Ingredients
  

  • 100 g unsalted butter
  • 100 g marshmallows (I used small ones as they melt quicker)
  • 100 g milk chocolate
  • 150 g Rice Krispies
  • 250 g mini eggs

Topping

  • 200 g milk chocolate
  • 200 g mini eggs

Instructions
 

  • Line a 9 x 9-inch cake tin with greaseproof paper and make space in the fridge.
  • In a large saucepan place the 100g unsalted butter, 100g marshmallows and 100g milk chocolate.
  • Place on a low heat and allow the butter, marshmallows and chocolate to melt and keep stirring to combine.
  • Using a rolling pin bash the bag of mini eggs to break them up a bit. Pour them into the melted chocolate mixture along with the 125g Rice Krispies.
  • Pour the mix into the prepared tin and gently push it into a flat slab. Put to the side while you make the topping.
  • Gently melt the 200g of milk chocolate in 20-second bursts in the microwave until fully melted.
  • Pour the melted chocolate over the Rick Krispies in the cake tin and level off.
  • Sprinkle over the remaining 200g of Mini Eggs. Plus any sprinkles if you fancy it!
  • Place in the fridge for 1 hour. Then remove from the tin and slice up.
