The most important ingredient of all is the mini eggs! I crushed mine by letting a little air out the bag and then hitting them with a rolling pin, This ensures they break unevenly and allow for big chunks and slithers.

If you’re out of mini eggs or have other Easter chocolate, feel free to mix it in with your chopped mini eggs.

You can even put some on top of the Easter rice crispy treats. I love adding sprinkles too!

How to makemini egg rice krispie squares – step by step

Line a 9 x 9-inch cake tin with greaseproof paper and make space in the fridge. I promise, that’s the hardest part of the recipe. My fridge is always full.

In a large saucepan place the unsalted butter, marshmallows and milk chocolate.

Place on a low heat and allow the butter, marshmallows and chocolate to melt and keep stirring to combine.

Using a rolling pin bash the bag of mini eggs to break them up a bit. Pour them into the melted chocolate mixture along with the Rice Krispies.

Pour the mix into the prepared tin and gently push it into a flat slab. Put to the side while you make the topping.

Gently melt the milk chocolate in short bursts in the microwave.

Pour the melted chocolate over the Rick Krispies in the cake tin and level off.

Sprinkle over the remaining Mini Eggs. Plus any sprinkles if you fancy it! Place in the fridge for 1 hour. Then remove from the tin and slice up.

Ingredients
 

  • 100 g (3 ½ oz) unsalted butter
  • 100 g (1 ⅓ cups) marshmallows (I used small ones as they melt quicker)
  • 100 g (3 ½ oz) milk chocolate
  • 150 g (5 ⅓ cups) Rice Krispies
  • 250 g (1 cups) mini eggs

Topping

  • 200 g (1 ⅐ cups) milk chocolate
  • 200 g (7 oz) mini eggs

Instructions
 

  • Line a 9 x 9-inch cake tin with greaseproof paper and make space in the fridge.
  • In a large saucepan place the 100g unsalted butter, 100g marshmallows and 100g milk chocolate.
  • Place on a low heat and allow the butter, marshmallows and chocolate to melt and keep stirring to combine.
  • Using a rolling pin bash the bag of mini eggs to break them up a bit. Pour them into the melted chocolate mixture along with the 125g Rice Krispies.
  • Pour the mix into the prepared tin and gently push it into a flat slab. Put to the side while you make the topping.
  • Gently melt the 200g of milk chocolate in 20-second bursts in the microwave until fully melted.
  • Pour the melted chocolate over the Rick Krispies in the cake tin and level off.
  • Sprinkle over the remaining 200g of Mini Eggs. Plus any sprinkles if you fancy it!
  • Place in the fridge for 1 hour. Then remove from the tin and slice up.
