Christmas isn’t Christmas without mince pies. For this recipe, you can use shop-bought or homemade mince pies work incredibly well in this recipe. If they’ve gone a little stale but are still edible they will work too.

A crucial part of all flapjacks is the lovely oat texture. The mix of oats and the mince pies are so moreish and above all give a beautiful taste to the finished flapjacks.

How to make Mince Pie Flapjacks – step by step

Place the butter, caster sugar, golden syrup and condensed milk into a saucepan.

Melt the ingredients together on a medium-low heat so they soften and melt gradually. Keep stirring so they don’t burn.

Remove the saucepan from the heat and stir in the oats.

Chop up the mince pies roughly and mix them into the flapjacks mixture.

Pour the mix into the prepared cake tin and level off. If you have any leftover pieces of mince pie add a few to the top.

When they are baked and still warm, gently slice the flapjacks. It’s a lot easier when they are still warm.

Chopped fruits and nuts

Chopped sweet fruits and nuts add great flavour and texture to these flapjacks, the nuts add a wonderful crunch and dried fruits are full of tangy flavour, and sweetness and they take the mince pie flapjacks to the next level.

Melted Chocolate

You can drizzle melted chocolate over these flapjack squares. I love adding rich dark chocolate but you can mix it up with milk or white chocolate depending on your preference.

Storing Mince Pie Flapjacks / Making ahead of time options

Flapjacks can be kept in an air-tight container for about a week before they go too hard. Layer them between kitchen roll to eep them free of excess moisture. If they do a bit hard round the edges you can pop them in the microwave for 20 second bursts to warm them up. This will soften them too.

You can also freeze flapjacks once they have been baked and fully cooled. Cut them into portions and wrap each one in clingfilm and tinfoil before placing in the freezer for up to 1 month. When you’re ready to enjoy your mince pie flapjacks, simply defrost your portion and eat it either hot or cold.

Ingredients
 

  • 200 g (7 oz) condensed milk
  • 300 g (1 cups) unsalted butter
  • 250 g (1 cups) golden caster sugar
  • 3 tbsp (3 tbsp) golden syrup
  • 600 g (7.5 cups) oats
  • 6 mince pies

  • Preheat the oven to 170ºC / 160ºC fan / 320ºF / Gask mark 3.
  • Line 9 x 12 inch tin with greaseproof paper. It's so much easier for getting them out.
  • Add the butter, golden syrup, caster sugar and condensed milk to a saucepan and on a low heat melt together. Keep stirring to make sure it doesn't stick or burn.

  • Remove the saucepan from the heat and stir in the oats. Plus any flavours, dried fruit or nuts you want.
  • Roughly chop up the mince pies into chunky pieces.
  • Spoon the mix into the tin and level off.

  • When freshly baked from the oven gently cut them and leave them to cool.

Notes

  • If you want to add flavours, nuts or dried fruit then mix them in with the oats in the recipe.
  • As they stay soft you can make them ahead of time.
