The top tip I have for making cocktails is make sure you have ice! A cold cocktail is the best and especially with shaken cocktails the ice is so important for cooling the drink down.

Pineapple Mojito
Ingredients
- 10 fresh mint leaves
- 3 wedges lime (half a lime)
- 12.5 ml sugar syrup
- 50 ml pineapple rum (or use 50ml white rum and 50ml pineapple juice)
- ice cubes
- soda water
Garnish
- 1 lime wheel
- 1 pineapple slice
Instructions
- In a large glass (I prefer jam jar glasses for this recipe) add the sugar syrup, rip up the mint and add it to the glass along with the lime wedges.10 fresh mint leaves, 3 wedges lime, 12.5 ml sugar syrup
- Gently use the muddler to squish the lime wedges and mix the juice, sugar syrup and mint together.
- Add the rum and stir.50 ml pineapple rum
- Top up with ice.ice cubes
- Pour over the soda water to near the top.soda water
- Use a spoon to mix it all together. You can then decorate if you want to add a garnish.
- Your pineapple mojito cocktail is ready!

- If you don’t have pineapple rum then you can make this cocktail with 50ml white rum and 50ml pineapple juice instead.
